Your supposed to not eat any meat except fish. The white meat thing is just the fat persons excuse to eat chicken. Its really not that hard to not eat meat for one day a week.

Yes. I'm poking fun. But it is a very valid option.
I might recommend Fr. Benedict Groeschel's book on Lent. It would certainly clear up a few things for you.
Don't be too wrapped up in the "letter of the law."
The spirit of your Lenten abstinence is sacrifice. If you go out and have lobster thermodor, you're observing the letter of the law, but completely corrupting the reason behind it.
These days we love fish so much, even having a broiled salmon dinner is a corruption of the meaning.
I'm a vegan Catholic. I still have to make a sacrifice on Friday. I gave up meat years ago. So on Friday I give up all sweets. That's my sacrifice.

First off, there is a very big difference between Fasting and Abstinence. The friday fish thing is Abstinence. Fasting means you get only one full meal a day.
Just so you know, Roman Catholicism is only one of 21 types of Catholicism under the Holy See. Many Catholics have always given up meat, eggs and dairy during lent. The Eastern and Orthodox Catholics, by and large. Byzantines come to mind. I love the Byzantines!!!
Days of honoring God's creation, such as Ember Days, celebrated at the change of a season, were dropped after Vatican II. So the Wiccan's picked them up and now have solstice and equinox parties. Just don't tell them they borrowed the idea from the Catholics. That irks them. They borrowed "Blessed Be" from us too.

Unfortunately, the concept of fasting has been bastardized over time by living in a society of convenience.
It used to be that people gave up all animals as well as eggs and dairy. The idea was to show respect for God's creatures by using them less (*less* meaning a day a week... and actually, it used to be 2 days a week... the other day was slowly lost to the gods of convenience as well.)
Later it became just animals, and later still it was decided that fish were not meat, but *fish.* A bit silly, yes, but yet another loophole so people could still eat animals.
I'm sure today there are those who decide not to eat *white meat,* just as there are those who want to call themselves vegetarians while eating animals such as fish and chicken. As far as vegetarianism goes, they are completely wrong.
As far as Lent goes, the original fasting has already been corrupted. But where is the sacrifice in that? Where is the sacrifice/fast in any of this?
In the end, it is up to the person who is practising his faith to decide what is most appropriate.

While I grew up Catholic, my family never had good answers for eating fish. A lot of Lent people have been coming here as of late so I was doing some looking around on the Internet. This is what many sites and churches seem to think (though I know quite well about internet and misinformation) as a part of the 3 pillars of lent: prayer, fasting and almsgiving.
I suppose I should leave the Catholic stuff to you.

However, I must say, with Wiccan being a form of Paganism, much of Christianity and its holidays and principles were taken from them (and other religions, of course).

You are not supposed to eat MEAT on Friday's during the lenten season. White meat such as chicken, pork is still considered MEAT.
A lot of people prefer having fish for their main meal on Friday's. I also enjoy fish but there are many other sea-foods to select from including' scallops, mussels, shrimp, scampi, lobster and they are al good and healthy for you. Meatless casseroles are easy to make and so is vegetarian spaghetti, eggplant and the like.
Personally I eat sea-foods on most all Fridays as it is healthier for you than red meats.

The whole point of not eating meat on Fridays until Easter is based on sacrifice or to identify with Jesus' suffering.
That being the case, eating chicken or even fish would be hypocritical since you are enjoying it and are not showing enough discipline to control yourself.
This hypocrisy extends to the church since they permit fish. We all know how juicy a tasty fish can be when cooked correctly.

It seems asking vegetarians and vegans isn't a smart idea - what about switching to the Christian section? Not everybody here is Catholic or even Christian.
