Does anyone know any good vegetarian recipes. No tofu please. If possible some quick & easy meals. I work 4 jobs so I don't have time for long complicated recipes.

I posted this earlier for someone else......

Chili Mac (no meat)

1 can tomato sauce 8oz
2/3 cup macaroni (I use wheat)
3/4 cup water
2 teaspoons chili powder
1 cup canned kidney beans (rinsed)
1 cup canned black beans (rinsed)
any where from 1/2 cup to 1 cup of salsa.
sprinkle of garlic powder

Combine all ingredients. Bring to a boil. Reduce heat. Cover and simmer for about 15 or so minutes. Be sure to stir frequently.

Makes about 4 servings.

I like to make this b/c it is so easy and quick. It also seems to have a better taste the next day. If you're watching sodium, just use low sodium ingredients or substitute tomatoes for the salsa. Hope this helps!! Oh and if your not vegan, top it with cheese.

Quick & Easy Vegetarian Empanadas:

35 min 20 min prep
6 servings

2 tablespoons olive oil
1 lb refrigerated pizza dough
1/2 cup flour (for the work surface)
1 (16 ounce) can refried beans
1 (1 pint) container fresh salsa
1 (8 ounce) package shredded cheddar cheese
sour cream (to garnish) (optional)
avocados (to garnish) (optional)

1. Heat oven to 400*F. Spread 1 teaspoon of the oil on a baking sheet.
2. Divide the dough into 6 equal portions. Roll each into an 8in round on a lightly floured surface. On 1 side of each round, spread some of the beans, then top with 1 1/2 tbs of salsa and 2 tbs of cheese.
3. Fold each of the rounds in half, covering the filling, and sealing the dough on the curved edge with your thumb. Lightly brush the tops of the empanadas with the remaining oil. Transfer to the already greased baking sheet.
4. Bake 12-15 minutes until golden.
5. Serve with a dollop of sour cream and sliced avocado if desired.

Black Bean Burrito, Indian Style

The combination of healthy ingredients in this burrito recipe will surprise you with its flavor. It brings together Southwestern ingredients with Eastern seasoning for an unusual and exciting twist on a favorite dish of many without the usual fat. The blended spice, garam masala is easily found in the spice section of your favorite market.

Prep and Cook Time: 30 minutes

Ingredients:
1 medium onion cut in half and sliced thin
4 medium cloves garlic, chopped
1 tsp minced fresh ginger
1½ cups sweet sweet potatoe or yam cut in ½ inch cubes
1 cup green peppers, thin julienne
1 cup red peppers, thin julienne
1 tsp garam masala
½ cup + 1 TBS vegetable broth
1 15 oz can black beans, drained
*optional 2 oz Chevre goat cheese
salt and black pepper to taste
4 whole wheat tortillas
Topping
*(optional) prepared salsa
1 head of romaine lettuce, shredded (remove outer leaves and discard)


Directions:



Prepare vegetables by chopping and slicing.

Heat 1 TBS broth in a 12 inch stainless steel skillet. Healthy Sauté onion, garlic, ginger, and peppers in broth over medium heat for about 5 minutes, stirring frequently. Add garam masala, yams and mix well. Add 1/2 cup broth and cook covered on low heat for about 10 minutes, or until vegetables are tender.

Add beans making sure they are drained well first and mix. Cook for another 5 minutes and season with salt and pepper.

While vegetables are cooking shred lettuce. You also might want to wrap tortillas in foil and place in the oven to warm while you are preparing the rest of the ingredients.

Place vegetable mixture in tortilla and top with some goat cheese. Roll and top with salsa and shredded lettuce.

Serves 4


Healthy Cooking Tips:

Cutting bell peppers thin and the sweet potatoes small will allow their flavors to blend together better as they cook than if they are cut into large pieces. Try to cut them as directed for best results. Store your leftover spices in the freezer to keep fresh for the next time you want to make this wonderful dish.

Mock Tuna Salad

* 2(15oz.) cans chick-peas, drained (or 3c. cooked)
* ¾ cup vegan mayonnaise
* 1/3 cup relish
* 2 teaspoon soy sauce
* 1 teaspoon kelp powder (optional)
* ½ salt
* pepper, to taste

Put all the ingredients in food processor and mix. Add finely chopped celery. cover and refrigerate. Use on sandwiches or on a bed of salad greens.

QUICK & EASY VEGETARIAN CHILI

1 sm. onion, chopped
1/2 green pepper, chopped
1 lg. can chili beans with sauce
1 can tomatoes
1/2 c. corn
1 sm. can Campbell's chunky vegetable soup
Taco seasoning mix

Serve over spaghetti with grated cheese, if desired.
Saute onion and green pepper in small amount of oil in large pot until veggies are soft. Add 1 large can of chili beans with sauce, 1 can tomatoes, 1/2 cup corn, 1 small can Campbell's chunky vegetable soup and thicken with 1/2 pack taco seasoning mix. Season to taste with salt, pepper or chili powder. Optional: Add any leftover veggies on hand, i.e. carrots, green beans, broccoli, etc. Simmer 20 minutes.

My favorite easy dinner is bean tostadas:

Refried beans (from a can)
Tostada shells
Spanish Rice
Pico de gallo (pre-made from the grocery store or homemade)
Chopped iceburg lettuce
Guacalmole or slice avacado
Soy cheese
Lime juice

YUM!

seriouslly if you can work 4 jobs, just get another job working at vegetarian restruants then you can eat freeeeeeee
