If you're not sure, go with something either potatoey or that uses Irish Cream (baileys) haha! Too bad you didn't need dessert- I had brownies last year that were iced with an Irish Cream icing and they were fabulous. That recipe is online - probably at Baileys.com
Here is one idea for a potato app- Have fun!
Stuffed small red potatoes:
makes 40 appetizers
1-1/2 pounds small red potatoes (about 20)
1 cup sour cream
4 bacon slices, cooked crisp, crumbled
1/2 teaspoon seasoned salt
1/4 teaspoon freshly cracked black pepper
2 teaspoons minced fresh chives
1/2 cup Cheddar Cheese, finely shredded
Fresh rosemary or parsley to garnish
Boil whole unpeeled potatoes until fork-tender but not mushy, put in cold water to stop cooking and drain. Cut in half without tearing the skins. Use a melon baller to scoop out the centers leaving a 1/4" shell (use centers for soup). Cut a small slice off the bottom of each potato to sit level on a plate.
Combine sour cream, bacon, seasoned salt, pepper and chives. Spoon mixture into small red potato centers, sprinkle with cheese, broil until cheese melts, garnish with rosemary or parsley and serve stuffed potato as an appetizer.
They can be made the day before, covered and refrigerated.

Baked or Fried Potato Skins with Aioli Sauce Dip
An old Irish saying goes that "Only two things in this world are too serious to be jested on, potatoes and matrimony." This recipe is a perfect appetizer for a St. Patrick's Day party, very easy to make, and absolutely delicious.
Scrub potatoes, rinse well and pat dry. Pierce the skins several time with a fork. Bake in a 350 degree oven for 45 minutes or until tender (or microwave on HIGH for 8 minutes). Let stand 4 minutes to cool slightly, cut in half, then scoop out flesh (set aside to use for the dip) This will leave an approximately 1/2 inch thick potato shell. Take a sharp knife, and cut shells into eight equal sections.
For baked skins, brush inside and outside with melted butter and sprinkle with coarse salt. Place on a baking sheet lined with tinfoil and bake at 475 degrees for 10-15 minutes until crisp.
For fried skins, heat oil and fry skins until crisp. Drain on paper towels.
To prepare the sauce:
Combine potato pulp, garlic and half the oil in a blender and blend until smooth. Add egg yolk and slowly add the remaining oil and the lemon juice. If sauce seems too thick, add a teaspoon or two of water. Serve sauce in a dip bowl surrounded by potato skins.

Boxty - Potato Griddle Cakes
INGREDIENTS:
1/2 pound raw potato, finely grated
1/2 pound mashed potato
1/2 pound all-purpose flour
milk
1 egg
salt and pepper
PREPARATION:
Combine grated and mashed potato. Add salt, pepper and flour. Beat egg and add to mixture with just enough milk to make a batter that will drop from a spoon. Drop by tablespoonfuls onto a hot griddle or skillet.
Cook over medium heat for 3 to 4 minutes on each side.
Serves 6 to 8.

Make a corned beef appetizer, Take flat bread meant to roll up or large flour tortillas. Spread goat cheese on the bread, sprinkle with parsley, layer slices of corned beef. Roll the bread into a log, place toothpicks every inch to hold the roll then slice between the toothpicks.

I would go with Italian style potato wedges. Go with a Monterey Jack cheese and Bacon over halved baked and then fried potatoes, that have been hallowed half way. Bake for an additional 15 minutes, and you can serve with salsa and a ranch dip. it's American, and Irish as the same time.

Get the spinach tortilla wraps (large)
mix softened cream cheese and chopped olives together.
spread over each tortilla.
roll tightly and refrigerate for a few hours.(put plastic wrap over them).
remove and cut into slices.
They are green for the occasion and look pretty when plated.
They also taste great, fantastic for an appetizer.
Everyone loves them young and old.

make a bean dip or something simple like that , I would like to sugest bufalo wings or something like that but the older people might not like thta so much..who knows.
you could get some cheese stiks and sause to dip in or something, chips and dip can never go wrong at a party.
