when I'm lazy I go on a raw food diet.It usually lasts a couple of weeks then I'll start cooking again.During the week this is what I usually eat.
B.Fast=Fruit smoothie with flax seed oil and 2 pieces of whole wheat toast
snack=nuts(pupmkin seeds, sunflower, alomonds)
lunch=beans and rice(brown)
snack=bowl of raw veggies(or 3 rice cakes covered with peanut butter)
dinner=something simple,my dinners vary alot

Annie's Organics is good. But in those kinds of situations, it is best to always plan ahead. I am not saying you don't but it helps to plan your meals a week in advanced so when times like this come up, you are prepared and you do have to eat junk and ruin your eating habits that you have been so discipline in.
Another thing. Just because a person is a vegetarian does not mean that they are healthy. I have seen some vegetarians that eat very bad. That is there choice, but why put all the effort into your food choice if you are going to be lazy about it and eat junk?
Try some new recipes and new fruits. Mix up your food choices so that you do not get bored. Have you ever considered meal replacement bars?

THere are an ever increasing number of pre made foods available in your supermarket frozen food section catering even to Vegetarians. I try to keep a couple of them on hand for when I am feeling to lazy to do anything, or if I'm out and don't want to have to cook or anything when I get home, nothing beats Pizza.

raw fruits that require just a simple rinse, like
apples, bananas, grapes, clementines (easy to peel)
cereal with dried fruit, nuts, and soymilk
munch some sunflower seeds or soynuts

My favorite quick-n-easy burrito recipe:
1 can vegetarian (no lard) refried beans
1 can black beans
1 cup salsa or chopped tomatoes and peppers
+ chilli powder or other seasonings
+ corn also makes a colorful and texturally exciting addition, but provides little in the way of nutrition.
simmer in saucepan or microwave. fill wheat tortillas, wrap, and enjoy!

The sad option is "convenience foods." It's sad because they are precooked, processed and loaded with chemicals. So you'll just end up feeling more tired.
I have those days to. I totally empathize. Sometimes it's ok just to give in to the junk food and feel totally icky for a week.
Annie's Organics is pretty good.

Fruit... or some veggies and hummus....
I'm pretty much lazy often (of busy and not wanting to cook), so when I do cook... I always cook a large amount so that I can re-heat leftovers.
The microwave is my friend...

dude, fruit is so easy. just wash it! could you image if you had to make a steak :X be grateful. either that or locate a vegan restaurant near you :D
