4 ripe avocados
juice of one lime
1/2 cup finely chopped red onion
4 cloves garlic
1/4 teaspoon salt
1/4 teaspoon cumin
1/4 cup chopped fresh cilantro
1 small seeded chopped jalapeno
mash the avacado with the lime juice semi chunky
add other ingredients and mix well
refrigerate for at least one hour
serve topped with cheddar cheese and finely chopped tomatoes.
serve with corn chips or tortilla chips
best dam guacamole ever!

This one is different and SOOO yummy:
Super Rueben Dip
1/2 cup mayonnaise
1/2 cup thousand island dressing
16 ounces sauerkraut, rinsed and squeezed dry
8 ounces shredded corned beef
16 ounces shredded swiss cheese
Preheat oven to 350 degrees F (175 degrees C).
In a small bowl, combine mayonnaise and dressing.
Spread sauerkraut into a 9x13-inch baking dish.
Layer corned beef, Swiss cheese, and the mayonnaise-dressing mixture on top of the sauerkraut.
Bake for 20 to 25 minutes.
Serve in a hollowed out rye bowl and/or with crackers and bite-sized bits of rye bread.

Hot Artichoke Dip:
2 cans artichoke hearts, drained and chopped
1 can diced green chili's
1 tsp hot sauce
1/2 tsp lemon juice
1/2 tsp garlic powder
2 cups shredded parmesan cheese
3/4 cup whole mayonaise
Blend the above ingrediants and place into a baking dish. Bake for approximately 35 minutes in a 350 degree oven, or until bubbly and slightly golden. Cool for 10 minutes before serving.
I serve this with blue corn tortilla chips or a sliced baguette.

Just Right Dip (from Aunt Bee's Mayberry Cookbook)
1 14 1/2 oz can asparagus spears, drained
1/2 cup sour cream
1/4 teaspoon hot sauce
1 teaspoon dried dill weed
1 teaspoon seasoned salt
In a blender combine all ingredients and whip until smooth. Adjust seasonings to taste. Serve with corn chips.
It's easy, very different and quite delicious!

Taco Dip
1 Brick of cream cheese (8 oz)
8 oz of sour cream
1 pkg of taco seasoning (such as Old El Paso or Ortega)
Approx. 3/4 cup shredded cheddar or colby-jack cheese
Blend cream cheese and sour cream until smooth. Stir in taco seasoning. Spread mixture into a pie plate. Sprinkle cheese on top. Let chill for at least 2 hours. Serve with tortilla chips.

Baked Cheddar Bacon Spread
INGREDIENTS
2 (8 ounce) packages cream cheese, softened
2 cups sour cream
1 medium onion, chopped
2 tablespoons mayonnaise
1 pound sliced bacon, cooked and crumbled
4 cups shredded Cheddar cheese, divided
Assorted crackers
DIRECTIONS
In a mixing bowl, beat the cream cheese, sour cream, onion and mayonnaise until smooth. Fold in bacon and 3 cups of cheddar cheese. Transfer to a 2-qt. baking dish. Sprinkle with remaining cheese. Bake, uncovered, at 375 degrees F for 30 minutes or until lightly browned. Serve with crackers.

Any kind of dip with Velveeta Cheese is usually a good idea. I make it for work when ever we have a pot luck lunch, and the eat every bit of it!. I use 2 blocks of Velveeta Cheese, a jar of chunky salsa, ground chuck, 1 half can of beans, and a touch of chili or Cajun seasoning.

My boyfriend has the easiest, hardest to stop eating dip ever. It was his Mother's recipe.
You need:
1 8 oz. block cream cheese
1/4 c of milk (no less than 2%)
1 tbsp garlic powder
1 tsp. season salt
2 tbsp. Worcestershire sauce
Then you just mix until smooth. We actually like ours a little lumpy. It goes great with chips and veggies. It is hard to stop eating.
