don't confuse vegetarian with diet. yes vegetarian is a way of eating, but that doesn't it is a weight-loss diet. dairy foods and eggs are extremely high in fat no matter what the dairy industry tells you. trying to lose a significant amount of weight in one month is not healthy nor reasonable. if you want to lose weight take it slow. eat a lot of fiber to help digestion.and bulk up on fruits and veggies which are high in vitamins and low in calories. if you eat them raw they also contain enzymes which aid in digestion as well.

Rapid weight loss is very bad. Your body is a simple machine with two modes. Feast or Famine. If you rapidly drop a lot of weight then your metabolism will shut down. You will go into famine mode. Which means your body will store everything it can.
This is why we have the boomerang or yo-yo effect of diets.
You have to drop weight very slowly. The slower you drop it the better your chance of keeping it off.
I'm very fond of whole wheat pita. I love to stuff them full of all kinds of goodies. Avocado, sprouts, grilled veggies, grilled tofu, sprouts, miso mayo. You can do something different every day.
You can speed up your metabolism by eating smaller meals many times a day. 6 or 8 rather than one or two. Increase your walking. It's an excellent non-impact way to boost your metabolism.
Don't cut calories. Cut sugar. Read the label of everything you intend to eat. If it's got sugar in it, don't eat it. Maltose, dextrose, fructose, glucose, lactose. All these things are sugars. Don't go for "sugar free" artificial sugars either. They are toxic.
PS: Baby Carrots are NOT good. They are loaded in sugar and will increase your hunger. A LOT.

Serves 2
* 1 whole wheat tortilla (12-inch), any flavor
* 11/2 TB low fat cream cheese, room temperature
* 3 leaves leaf lettuce
* 4 thin slices tomato
* 1/2 avocado, thinly sliced
* 1/2 cup black beans
Spread the tortilla thinly with the cream cheese. Place 2 lettuce leaves over the cream cheese. Layer the tomato, avocado, over cream cheese. Spoon on black beans evenly. Top with the remaining lettuce leaf, and roll tightly. Slice in half diagonally.
Half should be enough for one person. You can eat the rest next day.

Bring cold rice and peas with curry on top. Even cold, this is tasty and vegan. The warmth of the curry almost makes it seem warm, even cold.
Jamaican Rice and Peas
INGREDIENTS:
Serves: 4-5
1 medium sized can red kidney beans
1 can coconut milk
2 cups of rice
1 small onion, chopped
1 clove garlic, chopped
1/4 teaspoon dried thyme
1 table spoon oil
1 scotch bonnet pepper (whole, do not chop up)
water
Drain the liquid from the can of beans into a measuring cup and add the can of coconut milk and enough water to make four cups of liquid. Place liquids in a pot with beans, onions, garlic, thyme and oil, bring to a boil. Add rice and stir for a minute. Reduce heat to Medium-Low. Place scotch bonnet pepper on top of liquid and cover tightly for 30 minutes or until rice is cooked. Remove scotch bonnet pepper before serving.
This recipes can also be made using other peas.
Curry Sauce
1 large onion
1 tablespoon prepared ginger
or
1 inch fresh ginger, peeled and minced
2 tablespoons prepared minced garlic
or
5 cloves, minced
2 medium tomatoes
2 serrano chiles, seeded
2 tablespoons peanut oil
1 tablespoon margarine
1 teaspoon ground cinnamon
1 teaspoon fresh ground pepper
2 tablespoons ground coriander
2 tablespoons ground cumin
1/4 teaspoon turmeric
1/2 teaspoon cayenne
1/2 cup lowfat yogurt, whisked until smooth.
3 cups water
salt to taste
Directions:
Coarsely chop the onion. Heat oil and margarine together over medium-high heat in large pan (a wok is good). Cook the onion until it's very brown. Add the minced ginger and garlic to the onion and cook for an additional 2 minutes. Process onion/ginger/garlic mixture in a food processor until smooth. Return mixture to stove - at this point it might be good to switch from the wok to a large saucepan. Add all the spices and cook over low heat. Add a little water if necessary to mix in the spices, but the mixture should be thick like a paste. Puree the tomatoes and peppers in the food processor until smooth. Add to onion mixture and stir well over low heat to cook off excess moisture. Add 1/2 cup yogurt a little at a time, stirring constantly to avoid curdling. Add the water, increase heat to high, and bring to a rolling boil. Cover the pot and boil for 3-5 minutes, then reduce heat and cook until you've reached the desired texture. Add salt if desired. If serving with meat or vegetables, cook the meat or vegetables first, then simmer in the sauce for 5-10 minutes before serving.

Make sure you have a liter of water. Aside from that, for lunch pack a small salad with fat free dressing. You can also have baby carrots in a bad and bring along some hummus. Bring fruit salads instead of vegetables. You might want to add tofu to your salad to give it for protein.

This may sounds silly but it's really good.
Take 2 pieces of bread to make a sandwich and put some mustard on each piece of bread. Put a big heap of baby spinach leaves on it with a couple of pickles layered on top (I like sweet pickles, but you can use dill too.) That's it! It's tasty, low fat and healthy. You can mix it up too by adding some mushrooms layered on it or even a slice of tofu.

Celery with peanut butter in the groove. Gives you what you need to get through the day, high in anti-oxidants for protection from cancers and illnesses....and tasty. Also, it takes a while to chew them up and the chewing action is proved to be a hunger reducer (that's how chewing gum got started...weight reduction, hunger reducer...LOL)
Also, baby carrots are good and throw in some fruit for sweetness...plums, pears, apricots, apples.

Can you buy a thermos? My daughter (12) takes a thermos with soup, mac and cheese, stir fry rice, cous cous, etc. If not, you can pack cheese and cucumber sandwiches, tomato stuffed with stir fry rice (served cold) veggies, sprouts, and cheese wrapped in tortilla or lettuce. Pasta salad. Rice salad. Raw veggies with ranch dressing, salsa, or hummus. Email if you need more info. Good luck!

I'm a vegetarian and I usually get some mornigstar vegitarian, mini corn dogs, or boca burgers, they're for vegheads too. And I pack fruit and veggies, and I like peanut butter and jelly sandwhiches.
