well, you do know at asian restaurants you're not suppossed to order one dish per person right? you simply order 2-3 and everyone shares it over rice. i don't think they give too much, how much are you ordering?

Restaurants, in a general sense, do this in order to satisfy the customers. If too little food is given the restaurant may be not as appealing to those who eat a lot. With this characteristic, even if the food is not very high quality, the customer will still be satisfied with the quantity.

Chinese Restaurants give you alot of food because they know that you will want more. You see, chinese food has a lot of carbs in it as well as msg. MSG gives flavor to the food and is really addictive. Carbs will fill you up fast but will let you down quickly. I can go to a chinese buffet and stuff myself and be hungry 20 minutes later. The body processes these carbs very quickly. In the more ethnic chinese restaurants they use a type of rice that is very sticky. This has a tendency to fill you up faster. But once again the food has msg and it leaves you craving more.

Competition. If one restaurant is charging the same price for each dish and giving more food, they all have to follow suit to retain customers.

Because it is meant to be eaten family style. One plate per person with many dishes in the middle so everyone gets a little of everything.

So you will not balk at the price. If they gave half as much, they would not reduce the price by half. It's mostly carrots adn celery anyway, which are cheap. Plus, there's a mentality that if we take leftovers home, we've gotten a good deal.
