fast and simple and i dont really like tofu
and please dont give something w/ tunds of ingretients

and please dont involve any meat

try a veggie burger. they are very good the way my mother makes them she shredds all kinds of veggies and balls them upi and fries them they are delicious and easy eat them like a burger or even a snack

This recipe is very simple and taste great, I like it served warm.

Chinese Peanut Sauce over Pasta

½ cupPeanut butter
½ cupHot water
2 TBSPSoy sauce
2 TBSPSugar
3 clovesGarlic, minced
1 tspRice vinegar
To tasteCayenne pepper
1 BoxLinguine noodles

Cook pasta according to the box directions.

Place peanut butter in a small bowl. Add the hot water, and stir patiently with a spoon or whisk until uniformly mixed.

Stir in remaining ingredients and mix well.

If serving Cold:
Cover and refrigerate. Let come to room temp and pour over cooled noodles.

If serving warm:
Do not refrigerate. Pour over just cooked pasta and toss.

Just thought I'd point out: edamame is tofu on the hoof. Tofu is made from soy beans, edamame is another word for soy beans. Soy is the best single source of vegetable protein you can get and vegetarians need vegetable protein. Try them, they don't taste anything like tofu and they're great!

Also: Combine grains and legumes for a complete vegi protein: Peanut butter and bread, rice and beans, ...the list is endless. Think of any legume (comes in a pod, has two halves - beans, peas, peanuts, etc.) and add any grain (wheat, rice, bulgar, etc.) and eat them at the same time. Voila! Protein!

Enjoy being a vegetarian, I've been one for over 35 years.

mmm here's a yummy dessert... NO eggs, NO tofu, of course NO meat... :P and not a ton of stuff... (is a tund heavier than a ton? hehe just messin'...) ;)

Grandma Rose’s Chocolate Moist Cake

2 ¼ cups flour, sifted
1 ¾ cups sugar
1 ½ tsp baking soda
¾ tsp salt
1 tsp vanilla
1 tsp white vinegar
½ cup vegetable oil
2 cups cold water
¾ cup cocoa

Grease & flour tube pan.

Mix all ingredients in mixer/blender for 2 minutes.

Bake 350 for 3–35 min, or until toothpick poked into it, comes out dry.

Dust with confectioner sugar when cool.

Here's one of our quick favorites:

Warm Taco Dinner Salad
(microwave recipe)

1 onion, chopped
About 1 tsp margarine
16 oz can crushed tomatoes, undrained (I use no salt added)
1-1/4 tsp chili powder
1 tsp cumin
Couple dashes of black pepper
About 2 tsp sugar
About 2 tbsp catsup (couple of squeezes)
2/3 cup dry TVP (textured vegetable protein)
16 oz can kidney beans, rinsed and drained
Fresh baby spinach (or roughly torn salad greens)
Non-fat sour cream
Corn tortilla chips
Optional: guacamole, cherry tomatoes, shredded cheese, etc.

Microwave onion and margarine in covered medium bowl until tender (~4-5 min?). Add tomatoes, chili powder, cumin, black pepper, sugar, and catsup. Then add TVP. Cover and microwave several minutes (~5?) until TVP is tender. Add beans and microwave another minute or two.

Place lots of baby spinach leaves in large individual salad bowls. Top with TVP mixture. Then top with sour cream (and optional ingredients, if using). Partially insert tortilla chips around the edges of each bowl. Serve immediately. Serves 2-4.

(To make guacamole I mash 1 avocado with a fork in a small bowl. Add 1 tsp lemon juice and 1-1/2 to 2 tbsp mild picante or salsa. Stir to combine.)

Vegetarian Chili

2-16oz. cans pinto beans(or kidney)
1/2 medium onion diced
2 cloves garlic minced
20 oz. petite cut canned tomatoes
I/2 can tomato paste
1/2 green pepper chopped
2 tbs. chili powder
1 tbs ground cummin
1 to 2 cups water depending on how thick you want your chili.
salt & pepper to taste

Saute garlic, green pepper and onion covered for 10-15 min. in 1 tbs. oil. Add other ingredients. Simmer for 45 minutes partially covered. Stir every 15 minutes.

I love what I call "Boca Joes"
1 package of ground boca burger (fake meat)
1 Can bold Manwich
1 small chopped onion (optional)
1 small can of Old El Paso chopped green chiles
Whole wheat burger buns or bun of choice

Throw the boca, and onions if you are using them, in a frying pan with about a tablespoon of olive oil- cook till hot, and the onions are translucent.
pour into medium saucepan. add chiles and manwich. cook till hot. Put in buns and enjoy!!!
My kids cant even tell that this isnt real meat and completely vegan if you eliminate the buns.(or use buns without egg)

Onion Spaghetti

INGREDIENTS
2 tablespoons olive oil
4 large onions, sliced
2 cloves garlic, crushed
1 tablespoon tomato paste
1 (14.5 ounce) can whole peeled tomatoes
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon chopped fresh basil
1/4 cup water
1 pound spaghetti

DIRECTIONS
Heat oil in a large skillet over medium heat. Cook onions and garlic in oil until soft. Stir in tomato paste, tomatoes, salt, pepper, basil and water. Cover, reduce heat to low, and simmer 20 minutes, until thickened.
While sauce is simmering, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Toss sauce with hot pasta.

Dear, how about starting with a pot of cooked white "Navy" beans? Cook a large pot of these wonderful beans without adding any salt or pepper or any other seasonings until they are completely softened. Boil 1 cup of white beans with 3 cups of water on medium heat for at least 3 hours. Stir often so the beans don't stick to the bottom of the pot. When the beans are softened completely, remove from heat and cool completely. You can now mash these beans in a large bowl. With this large bowl of mashed beans, you can make just about any flavor of "meat" patty you would like to add to your dinner. For example, if you want "beef patties", add vegetarian or vegan beef flavoring to 1 cup of cooked beans plus 2 tablespoons cornstarch. Form into patties. Fry in hot canola oil on medium heat for 2 minutes on each side or until each side is a golden brown.

For whatever flavor you would like your "meat" patties to be, just add vegan or vegetarian "meat" flavoring to your bean mixture when your make the patties with the cornstarch. You can also add diced dried onions to the patties. You can make mushroom flavored patties, too. I make pastrami flavored patties for wonderful Reuben sandwiches by making "beef" patties and adding extra pepper and a dash of apple cider vinegar. I layer a patty with sauerkraut and vegan cheese on sourdough or pumpernickel bread...yummy!

Your imagination will take you places in making yummy "meat" items with these humble beans...enjoy your new experiments and delicious recipes!

Buy a bag of pre-made ravioli and a jar of spaghetti sauce and spice it up with garlic, italian seasoning and freshly grated parmesan.
Easy side dishes I like to make include sliced tomatos with vinegar and oil, salt, pepper, topped with fresh feta or parmesan. Rice dishes are also easy and can be topped with almost anything and for more complicated dishes you can cook things like stuffed mushrooms.
