Use a Chafing dish. covered pans that use a small heat source called sternos, gel or liquid in a small covered can with a wick that you light, almost like a large enclosed tealight candle, there is asmall pan undeneath the dish taht is holding the god with water in it that heats up and steams the food warm.
You can but them at any cookware store, really good/professional ones can be bought at a restaurant supply store that also sells to the public

Not sure if you're transporting the foods, or just trying to keep things hot. Crockpots or roasters will hold things at a constant temperature while you make other things. If you're transporting them, use beer coolers. They work just as well at keeping things warm as they do at keeping things cold. I also really like the answer above - I hadn't thought of heating bricks in the oven.

go to your local party store and rent some steam trays. Another option is to heat bricks in the oven and place them under your dishes, just make sure you place them on a towel first so they dont burn your counter of table.
