I have some Dona Maria Mole, and I want to know if anyone has any good tips/recipes to make a good (close to authentic) chicken mole? I have New Mexico chiles and seaseme seeds one had if needed. I am experienced in cooking mexican foods as well.

i use that brand when i make it...
i first boil chicken thighs (boneless or with bone) with onion and garlic, salt, pepper.
when its done i remove the chicken from broth, and add the mole mix to a blender and blend with hot chicken broth from boiled chicken..i keep adding till i get the consistency i like( not to thick or runny ) then i add the mole mix to the chicken and you can serve right away or cook chicken a while in mole mix. i usually cant wait that long. usually if you cook chicken in mix you will have to add more broth because it will continue to thicken.
TIP: if you have left over broth make you rice with it...its so good with fresh chicken broth!!

DONA MARIA AUTHENTIC CHICKEN MOLE

Ingredients:

1 (about 4 pounds) cut-up fryer chicken
Salt and pepper to taste
1 tablespoon oil
1 (8.25-ounce) jar DONA MARIA® mole
4 cups chicken broth
1 cup sliced almonds
1/4 cup sesame seed

Method:

Preheat oven to 350°F. Rinse chicken pieces and place on a rack in a shallow baking pan. Spray with nonstick coating spray or brush with oil. Season with salt and pepper. Bake uncovered at 350°F for 1 hour or until internal juices are no longer pink. Meanwhile, heat oil in 2-quart saucepan. Stir in mole and heat for 1 to 2 minutes; stir constantly. Gradually add chicken broth; stir to dissolve mole. Bring to boiling, reduce heat and simmer, covered with lid slightly askew, for 1 hour. Stir frequently. Spread almonds on a cookie sheet. Bake at 350°F until lightly toasted (about 2 to 3 minutes); stir frequently and watch carefully so they will not burn. Remove chicken from oven and transfer to serving plate. Top with almonds, some of the mole mixture and sesame seed. Serve with remaining mole mixture. 8 servings.

tomatoe sauce, dried pasilla chili pods (soften after being set in hot water ), salt, fresh garlic, onions, sugar (taste for how sweet you want it), cocoa powder-unsweetened, 2 Tablspns of peanut butter, cinninom, toasted sesame seeds. YOu blend all of this in a blender and then transfer to a pot to simmer on med to low heat. If too thick add some water to the consistancy you want.
And then you add your chicken.
I have the exact recipe but don't have time to look up.This is all in my head. This recipe is a sweet chocolate mole. There are many differnent types of moles. Red mole, green mole, etc...

1/4 cup raisins
2 garlic cloves, minced
1/2 teaspoon cumin
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1 onion, chopped
1/4 teaspoon cinnamon
1 green pepper, chopped
1/2 teaspoon salt
3 slices pimento pepper, chopped
1/4 teaspoon pepper
1 teaspoon sugar
2 large tomatoes, peeled, seeded and chopped
1 grated orange, rind of
2 ounces unsweetened chocolate squares, chopped
2 tablespoons chili powder (or to taste)
2 1/2 cups chicken broth
1/4 cup light rum
1/4 cup slivered almonds

In casserole, heat oil and cook garlic for a few moments to flavour oil; add chicken and brown.
Remove chicken.
In remaining fat, cook onion, green pepper, pimento, and tomato over gentle heat for 10 minutes.
To onion mixture, add chili powder, blending well.
Add broth, almonds, raisins, seasonings, and rind; simmer, covered, 30 minutes longer.
Add chocolate, stirring until melted.
Replace chicken, spooning sauce over.
Bake, covered, at 350 degrees for 1 hour, or until chicken is tender.
Warm rum, ignite it, and pour over contents of casserole; allow to stand for a few minutes.
