HYDERABADI LAMB BIRYANI

Ingredients:

Green chillies - 8
Basmati rice - 4 cups
Mutton or Lamb - 1.5 kgs, diced into 1.5-inch cubes
Plain yoghurt - 2 cups
Ginger - 1-inch piece
Garlic - 10 large cloves
Cloves - 14
1-inch Cinnomon stick - 2
Cardomon - 10
Onions - 10 small, finely chopped
Ghee - 1.5 cups
Boiling water - 6 cups
Turmeric powder - 1 teaspoon
Salt - 3 teaspoons

Method for "Hyderabadi Mutton(Lamb) Biryani"

Wash and soak the rice in water for half an hour. Drain off the water and tie the rice into a cloth. Add the meat to a mixture of the yogurt and 2 teaspoons salt and set aside. Saute the chillies in 1 Tablespoon ghee. Mix the chillies, ginger, garlic, and half the cinnamon, cloves and cardamom together and grind into a fine paste. Rub the ground spices into the meat. Heat half of the remaining ghee and add the meat, spice/yogurt mixture and half the onions. Cook over a low fire until the meat is tender. Heat the remaining ghee and add the remaining cinnamon, cloves and cardamom. After they have cooked for a few minutes add the rest of the onions and fry until they are golden brown. Add the rice and fry it until it is slightly brown. At this point, add boiling water, and then the turmeric and remaining salt. Let the rice mixture cook until the water is almost level with the grains (the rice should be half done by then) and then add the meat and its gravy. Do not mix them. Place a tight lid on the pot, and let the biriyani simmer for 15-20 minutes. After this, mix well and serve.

***NAWABI BIRYANI***


Ingredients:

325 gms. Basmati rice
1/2 kg. Mutton, cut in pieces
3 Onions, sliced
1/2 tbsp. Ginger-garlic paste
1 tsp. Garam masala
3 nos. Red chilies
1" piece Cinnamon
1/2 cup Curd, beaten
3 nos. Green cardamom
5 nos. Pepper
5 nos. Cloves
1/2 tsp. Shahjeera
1/2 tsp. Turmeric powder
1/4 cup milk with Saffron
1 pinch Coriander/Pudina, chopped As required
Jardalu (apricots 5 nos.)
Dry fruits



Method:

Fry the dry fruits & apricots in 2½ tbsps. ghee with a little salt to taste.

Now grind the fried onions and red chilies to a fine paste.
Marinate the mutton pieces with curd, ginger-garlic paste, onion paste, turmeric powder and salt.

In a pressure cooker heat ghee, add the marinated mutton and pressure cook till done.

Heat ghee again in another vessel, add the whole spices, fry for a while and then add the washed rice.

Add salt, warm water so that comes 1½ inch above the rice and cook till the rice is done.

Remove, spread out to cool and remove the whole spices.
Now to assemble, apply ghee to a heavy bottomed vessel, add the cooked mutton and sprinkle little garam masala.

Cover with a layer of rice, followed by a melted ghee and then the saffron milk.

Lastly, add the fried nuts, cover tightly and keep on dum for 15-20 minutes.
Mix and serve hot garnished with chopped coriander & pudina.

this is the best recipe that i could think of as this turns out lovely n delicious-this is the recipe that my grandma used to make her biryani the BEST

3 cups basmati rice,washed

and soaked in water

1 kg mutton cut into medium sized pieces

5-6 medium onions,sliced fine and fried crisp

1 tbsp ginger-garlic paste

2 tsp garam masala

6 red chillies

1 cup beaten curd

2 pieces dalchini(cinnamon)

6 green elaichi(cardamoms)

1 tsp shahijeera

10 kalimiri

1 tsp turmeric powder

salt to taste

5 tbsp ghee,melted

2 pinches saffron,dissolved in 1/2 cup milk

1 tbsp each of almonds,cashewnuts,raisins.

Method:

Fry almonds,cashewnuts and raisins and keep aside.

Marinate mutton with beaten curd,ginger-garlic paste,

onion,red chilli paste,turmeric powder and salt to taste.

Grind fried onions and red chillies to fine paste.

Heat half of ghee,add marinated mutton and pressure

cook till done.

Heat 2 tbsp ghee add whole garam masala,when

splutters add drained rice and fry a little.then add warm

water,1 1/2 inches above the rice level.Add salt to taste.

Cook till rice is done,then spread on a plate and remove

the whole garam masala.

To Assemble:

Take a heavy bottom vessel and line it with ghee.

Place the prepared mutton and sprinkle garam masala over it.

Cover with rice and dot with ghee.Make deep holes in the rice

then add the saffron milk,and sprinkle fried nuts and crisp fried

onion.Cover tightly and seal with wheat dough.Allow to cook

(dum)on low flame for 20-25 minute

goto shop and get mutton first then go and buy some nice basmati rice and all other spices may be biryani premixed spice. then cook all together i suppose it will turn out to be edible if mutton is tough then precook before u add rice with it.
