My roommates friend is vegan, and she is coming over for dinner. I am making derssert which has to be nut free, since one of us is allergic to nuts. Also, I would like it to be as simple and quick as possible, as our kitchen is small, and we need to make dinner at the same time. (No cookies either, since one of us gave up cookies for lent)

Vegan apple crisp or any other fruit you like. I find crisp to be one of the easiest desserts. You can serve it with Soy ice cream.

I personally like some of the brownies listed on the site. I'm not even vegan but you can't tell the difference!! Here's my favorite:
2 cups flour (I use enriched and whole wheat)
1 cup water
1 cup brown sugar
1 cup sugar
1 teaspoon salt
1 teaspoon vanilla extract
3/4 cup baking cocoa
1/2 cup oil - preferably vegetable oil
1/2 teaspoon baking powder
1/2 cup chopped nuts (optional)
1/2 cup vegan chocolate chips (optional)

Directions:

1. Boil water and 1/2 cup of the flour over low heat, stirring constantly, until it reaches the consistency of a thin gluey paste. Remove from heat and let cool completely.

2. Mix vegan sugar, salt, vanilla, cocoa and oil. Then add the rest flour-water mixture. Mix well.

3. Add the remaining 1 1/2 cups of flour, baking powder and the nuts or chocolate chips, if you choose to add those.

4. Spread mixture into a greased 11 x 7 pan. Bake at 350 for 25 minutes, or until a knife can be inserted and come out clean.


I added nuts and chocolate chips to mine but either could be easily left out. It's so nice that most chocolate chips are vegan!

Absurdly Easy Vegan Chocolate Cake
Ingredients
3 cups flour (680 grams)
2 cups sugar (450 grams) (read this first)
6 tablespoons cocoa (100 grams)
2 teaspoons baking soda (10 cc's = 10 ml)
1 teaspoon salt (5 cc's = 5 ml)
3/4 cup vegetable oil (200 cc's)
2 tablespoon vinegar (30 cc's)
2 teaspoon vanilla (10 cc's)
2 cup cold water (480 cc's)
Directions
Mix the dry ingredients. Add the wet ingredients. Stir until smooth. Bake two greased, floured pans at 350 degrees for 30 minutes. Makes two layers of a two-layer 9-inch or 8-inch round cake, or one small sheet cake. When cool, frost it.
Eat.

Cherry Cheezecake

INGREDIENTS

* 2 cups graham cracker crumbs
* 1/4 cup real maple syrup
*
* 1 (8 ounce) package firm silken tofu
* 1 (8 ounce) container nondairy cream cheese
* 1 tablespoon lemon zest
* 1 1/2 lemons, juiced
* 1 cup confectioners' sugar
* 1 tablespoon cornstarch
* 2 tablespoons soy milk
* 1 (21 ounce) can cherry pie filling

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl, mix together graham cracker crumbs and 1/4 cup maple syrup. Press into a 9 inch pie tin. Bake for 5 minutes.
3. In a blender, combine tofu, vegan cream cheese, lemon zest and juice, and confectioners' sugar. Dissolve cornstarch in soy milk, and add to the blender. Blend until smooth. Pour filling into crust.
4. Bake for 25 minutes at 350 degrees F (175 degrees C). Reduce heat to 325 degrees F (165 degrees C), and continue baking for 15 minutes, or until set. Cool on a wire rack, and then chill for several hours.
5. Invert onto a plate, and then invert again onto a serving platter. Pour cherry pie filling over the top, and serve.

So yummy!

There's a show on TLC I believe that has a lady who goes around talking about organic life - home and food. She went to a restaurant and learned to make a chocolate vegan cake. It may searchable on the TLC website. If not, I'm sure that the Food Channel website would have something.

To Gold Rush and others who are misinformed, Jello ISNT vegan because it contains gelatin which can essentially come from beef or pork parts.
