Quinoa is a grain from South America. The best place to find it would be a health food or whole food store. The grains must be washed before cooking as they are covered with a bitter soapy substance called saponin. It is then cooked in double its amount of water. Bring to a boil, cover tightly, turn the heat down and cook for 20 minutes. Let stand off heat for 15 minutes. It is now ready to be used as you would any other cooked grain.

Prepare it as you would rice...except remember that you need about 1/4 quinoa to water cause it expands a lot more when cooked. You will know it is finished when the little tail like thing uncoils out of the seed.
It is a very good grain...high in protein and tasty.

It is spelled QUINOA and pronounced KEEN WA. It is an ancient grain that is very healthy and is a protein that is high in amino acids. It is a tiny grain, with a little curl on it-like a bean sprout. It is very simply cooked in less than ten minutes in veggie stock or water. It makes a wonderful tabbouleh salad, or pilaf. I am allergic to wheat, so I rely heavily on this delicious grain. It can be purchased at health food stores. There are a few varieties, such as inca red, which is nutty and delish. I often have it for breakfast with a little rice milk and agave nector. I also use it with mashed beans to make patties. It is inexpensive, and very tasty-odds are that you will love it too. My 12 year old likes it packed in her thermos for lunch-it holds up well

I put 1 cup of quinoa in a fine mesh strainer and rinse it 2 or 3 times. Then put it in a pot with 2 cups water. Bring it to a boil, stir, turn it down to low simmer, cover the pot and let it cook for 20 minutes.
Use it the way you would rice or boiled potatoes. It also makes a good breakfast cereal. It is a tasty grain to add to your food plan.

I'm from Argentina and I love the kinoa. But it's very important that you wash the kinoa with water before cooking. Put the kinoa in a boal with water some minutes and then change the water.
