Feta Roast Potatoes
1 1/2 kg potatoes, washed
2 tablespoons olive oil
1/4 cup fresh lemon thyme (or regular thyme if you can't get lemon)
220 g greek feta
# Preheat your oven to 200 degree C.
# Grease a large baking dish.
# Cut potatoes into 1 cm thick slices.
# Arrange them in the baking dish.
# Drizzle potatoes with oil and add the thyme.
# Toss the potatoes to coat in oil and herb.
# Roast potatoes for 45 to 50 minutes or until tender.
# Increase temperature to 220 degree C.
# Crumble feta over potatoes and toss through.
# Return dish to oven for 10 minutes until feta softens.
Bon Appetit!

when I do a roast we always have loads of vegetables, we have the usual potato, pumkin, sweet potato and carrots then I do a seperate tray that goes in around 30-40 minutes before the end of cooking time. on this tray I will put zucchini (cut into quarters), baby eggplant (whole or halved), cherry tomatoes, whole button mushrooms, red capsicum (quartered and deseeded),asparagus and a whole bulb of garlic (segmented and peeled) I toss the garlic over all of the vegies. I drizzle this all with some olive oil and sprinkle fresh rosemary over the lot.

you should roast a pig whole, it would look so nice and decorate it with a whole bunch of veggies on the plater and also roast chicken and tukey both BBQ and original, taht s good alternative. I would also make rice ,cornbread, beans, baked potatoes, chili and pop, beer, smirnoff and gather some frineds for a game or something

Try roast lamb, mashed pots, mashed carrots & turnip, cauliflour & savoy cabbage with lashings of gravy! Sorry that's how I like it. Sunday roast is best meal in the world ever - I DO NOT CARE WHAT ANYONE SAYS. Enjoy whatever you have.
