As a healthcare provider I can tell you that it is not hard to come by. There are books on top of books in the bookstore or over the internet (Try Amazon.com) Every hospital has a diabetic councelor or nutritionist who will teach patients this necessary information. Each person has different nutritional needs and should be evaluated by a dietitian .
Sure we can give you some guidelines but your Mom has to get to know her body and how she reacts to different foods.
Educate yourself as well as your Mom. Read everything you can that was written in the past five yrs on diabetes and attend some diabetes ed classes.
People with diabetes can enjoy all food. It is a matter of portions, medication , exercise and education.

If you read her books or watch her crazy TV program on Tuesday evenings, you'll get the message from Gillian McKeith about the evils of sugar causing diabetes as well as other problems. Some of the people on her diet have been able to reduce the medication that they take for diabetes. Have a look at this website

He's recently written a book about how to cure ailments through diet. I've heard him on TV and would have a lot of time for him. Jason Vale - www.juicemaster.com is worth a look - although maybe your mother would be restricted to the veg juices and not the fruit. I've been juicing for years. Initially I didn't care for the green veg juices but it's amazing how you grow to love them. Fennel makes a great juice for instance. My husband likes carrot and ginger. It's really nice of you to go to this trouble for your Mom!

My step mother is diabetic. She eats alot of veggies and certain fruits. She eats meat but not alot only about 1 or 2 ounces at every meal. She mainly stays away from starchy foods and bread. She doesnt eat alot of stuff with more than 2 grams of sugar in it. The best cereal she eats is Cherrios.

Like the user above me mentioned to you, we all have ways our bodies respond to certain diets. Seek some assistance with a Dietician. They can guide you and your mother on what to eat, how much to eat. It's not an easy thing to do, but health is number 1 priority. Wish you both the best of luck.

Eat a lot of green salads with French dressings. No Soda and avoid desserts. Eat less oily fried food. No rice because carbohydrates turn to sugar once digested.
