i have to teach and help 45 girls make some kind of ethnnic food in about 45 minutes... our resourses (microwave, oven) are limited and i am all out of ideas!

Try to remember that most food can be cooked in 30 to 45 minutes at 350-degrees of heat.

The greatest amount of time is in the preparation stage: cleaning, paring, trimming, cutting, etc. A good cook has all the ingredients prepared and ready to cook before anything is subjected to heat.

Ethnic recipes are usually easy, once the food is prepared. Decide what ethnic grouping you want to teach then ask for recipes.

Vietnamese spring rolls are simple, delicious, nutritious and don't need utensils, except for a grill or pan. You'll need these items(some from an Asian market): rice paper, lettuce, Thai basil, mint, rice noodles, and any of the following: beef, pork, shrimp, catfish, squid, or more vegies, like bean sprouts if you want a vegetarian roll. You also need to buy fish sauce for dipping. (Unless you have time to make your own.) You can cook the meat ahead of time (grill or sautee the beef, shrimp, pork or squid, and steam the fish) and put everything out in individual dishes, that is, a plate of meat, a plate of vegies, etc. Each person also needs a bowl of water to wet/soften the rice paper for wrapping. Then each person can wrap his/her own. If space is limited, one large plate of meat, vegies, etc. can be shared among a small group. Enjoy!

Swedish small meatballs served alone or with a thin pan gravy and traditionally accompanied by potatoes and red lingonberry jam .

Serves 4 to 6; Yields two to three dozen meatballs, depending on size.
Ingredients
400-500 g ground meat [about 17.64 Ounces (oz)
1.102 Pounds (lb) ]
½ teaspoon black pepper
1 teaspoon salt
2 teaspoons potato starch or corn starch
½ dl (100 ml) milk
1 egg

butter or margarine and oil
Shape meat mixture into small balls. If the mixture sticks to your hands, wet them with cold water. Heat the frying pan and add butter and oil. Saute meatballs in 2 or 3 batches, shaking pan frequently to keep meatballs from sticking. Serve warm or cold.

to find the teff flour, call more than one health food store and ask about it...or an ethiopian or african grocery if one is in your area...

chicken tacos, easy. marinate it, grill it and shred it and fill tha tacos. Salsa, cheese, cilatro etc.,

meatball sandwich. - grill meatballs, soak in meatball sauce , fill sandwiches

chicken cordon bleu - look for recipeon the internet. all you need is ham slices, chicken breast, cheese, breading. STuff it, bread it and fold and grill in oven.
