This works for pork OR chicken

Get a fajita seasoning packet (McCormicks)
Marinate your meat of choice according to directions.
Grill meat and shread.

In a skillet, saute onions and peppers till soft. Add 1 can black beans, drained and rinsed. Add shredded meat. Wrap in a tortilla and top with cheese and sour cream. Top with canned Verde sauce or a cheese sauce.

Not the "healthiest" but sooo good. Fry the pork (steaks cut up into very small pieces) and boneless skinless chicken breasts the same way but separately. I fry them in olive oil and sprinkle chili powder, garlic powder, ground cumin, and lime juice in with them. Cook through, then remove from pan. Add little more oil then quick fry red onion and red bell pepper strips. Add the meat back in the pan, mix and keep warm. Do this for both the pork and again for the chicken. In a saucepan either melt a little bacon grease, or fry up one good strip of bacon, and carefully add a can of refried beans to it. Slowly heat it up and stir in some Frank's Red Hot sauce to taste. In another hot dry skillet, heat a flour tortilla until just warm, then spread (thinly) some of the refried beans on it, add the meat and pepper onion mixture, a dollop of sour cream, a little salsa or smooth taco sauce, and few sliced green onions, and some shredded cheese. Fold one end up a little then roll the whole thing up and ENJOY......

Pork Steak Burritos

INGREDIENTS
1 tablespoon vegetable oil
5 pork steaks, cut into strips
1 (12 ounce) jar salsa
10 (8 inch) flour tortillas
1 (8 ounce) container sour cream
3 green onions, sliced

DIRECTIONS
Heat the oil in a skillet over medium-high heat. Place pork in the skillet, and cook until evenly brown. Pour in the salsa, and continue cooking 5 minutes, until heated through.
Place tortillas 1 or 2 at a time on a microwave-safe dish. Cook in the microwave 1 minute on High, until warm. Place equal amounts of pork strips and salsa in the center of each warm tortilla, and roll. Top with sour cream and garnish with green onions to serve.
