For valentines day, I fixed Chateaubriand, layered salad, baked potato, sparkling cider, home made yeast rolls, fresh churned butter, and home baked cheesecake with fresh strawberry sauce. Candle light, and I sprinkled rose peddles on her plate and on the table, with a single rose on her plate.

Yes you read correct. I'm a man!!!

And I've done this with similar foods for 37 years!

CHATEAUBRIAND (10 oz.) (2 lb.) (4 lb.) FAVORITE!!
Oven Baking:
For a 4 lb. Tenderloin roast: Preheat oven to 425 degrees. The high heat is needed to develop a brown exterior. Season thawed roast with cracked pepper and salt or with steak seasoning. (Make certain that roast is thawed thoroughly. This will take 2 days in the refrigerator for a 4 pound roast). Place on a broiling pan or in a roasting pan. Roast uncovered in the oven 50-55 minutes for a four pound roast. (Remove from oven when the internal temperature reads 130 degrees F. After 15 minutes resting time, internal temperature will rise 5 degrees to 10 degrees F. to approximately 135 to 140 degrees F. which would be medium rare.) Serves 8-12.

For a two pound roast: Roast uncovered in the oven for approximately 38 to 40 minutes or until the internal temperature reads 130 degrees F. Let sit for 5 to 10 minutes. Final internal temperature will rise to 135 degrees which is medium rare. Serves 4-6.

For a 10 ounce chateaubriand: Roast for 18 to 20 minutes or until the internal temperature reads 130 degrees F. (For medium rare). For broiling 10 oz., allow 7-9 minutes per side. Serves 2.


7 LAYER SALAD Favorite!!

1 head of lettuce broken into pieces
3 celery stalks, chopped
3 green onions, chopped
4 hard boiled eggs
1/2 to 1 pkg. thawed uncooked green peas
bacon bits
grated PARMESAN CHEESE
Layer vegetables in a bowl, sprinkle cheese over the top.
Mix: 1 c. MAYONNAISE, (opt: + 1 c. plain yogurt, 1 tbsp. HIDDEN RANCH DRESSING (dry),) and spread over vegetables, sealing the edge. Cover tightly.
Refrigerate 8-24 hours. Toss before serving. (I prefer not to toss!)

This is my daughters recipe..
Cassandra's QUICK YEAST ROLLS Yield 2 Dozen
Dissolve 1 tbsp. yeast in a cup of luke warm water.
Put in 1 can of canned milk, 1 can luke warm water.
Stir till yeast is dissolved.
Add 1/3 cup of sugar and a heaping tsp. of salt, and 1/2
cup oil.
Stir till well blended.
Add flour until it's firm and doesn't stick to sides.
Dump onto a floured surface and kneed adding 1/2 cup of
flour at a time. KNEAD, KNEAD, KNEAD....
Once it's not sticky, let it rise till double in size.
Place on a greased cookie sheet and let rise. (25 min.)
Bake for 20 minutes or until golden brown at 350 F.

BASIC CHEESECAKE
1 1/2 lb. cream cheese, room temperature
1/2 c. sugar (or 3/4 c. splenda)
4 eggs
2 tsp. vanilla
1/3 c. whipping cream
Prepare 9" springform pan with crust of your choice. To prepare filling, beat cream cheese until fluffy. Add sugar and flour and continue beating for 1 minute more.
Add eggs, one at a time, mixing well. Stir in vanilla and cream. Pour into prepared crust and bake at 350 degrees for

approximately 50 minutes. Filling should be firmly set around outer two inches but should still wiggle in the middle. Remove from oven and cool on a rack to room temperature. Cover and

refrigerate for at least one day. Don't worry if the top cracks--- cover it with fruit, sour cream, or whipped cream!
For Crusts
Most wafer type cookies such as gingersnap, shortbread, chocolate, and especially graham crackers make nice crusts. Combine 1 3/4 cups finely crushed crumbs with 1/4 to 1/3 cup melted butter with a little sugar.
Combine thoroughly and press into the bottom of a 9" springform pan. Bake at 350 degrees for 10 minutes. Let cool completely before filling.
VARIATIONS:
Marbled Cheesecake
Prepare basic filling as directed and spoon into crust. Melt 3 oz. of semi-sweet chocolate and pour in a thin stream over filling. Using a knife, swirl to combine the two mixtures to achieve the marbled effect. Bake as directed.
White Chocolate Cheesecake
Prepare basic filling as directed except add the whipping cream to 1 1/2 bars (4 1/2 oz. total) of Tobler white chocolate. (eat the other half) Broken chunks and melt over low heat or in the microwave. Add to filling and mix well. Pour over crust and bake as directed. Top with whipped cream before serving.

Strawberry topping
1 pint of strawberries
1/4 c. sugar.

Cap half the berries (remove the green top) from 3/4 of the berries. Puree these in your food processor with the sugar. Slice the other berries lengthwise.
Pour the puree on top of the cheesecake, then put the sliced berries on top.

Two ways to go. Not messy, so the mood is on the two of you and not drips, spills, and splatters, or messy, and the intimacy of cleaning it "up".

Foods you can share from the same plate are nice, like shrimp, crudites, imported cheeses make nice starters. Oysters and mushrooms are good choices also.

For an intermezzo, maybe a Champagne Sorbet or Creme de Menthe Sherbet are great.

For entrees, I recommend something you rarely have, either at home or in a restaurant.

A simple, lightly seasoned Lobster Tail with drawn butter, maybe Tomato Polonaise (tomato halves topped with Parmesan bread crumbs and baked), and a mushroom risotto (risotto rice cooked with chopped mushrooms, milk or cream, and chicken stock).

For dessert. you CANNOT go wrong with fresh chocolate covered strawberries and a German Riesling.

I make these suggestions because they are easy and quick to make, the ingredients are readily available at the market, and isn't the point of a ROMANTIC dinner to be together, not slaving in the kitchen?

Ok, here we go The place will smell good and its filing , but not heavy ... you don't want to kill your date :-)
Telapia fish with capers and olives, steamed broccoli , & sweet peas: delicious and easy.
if you are over 21, white wine .
Dessert: puff pastries with strawberries and apples
The fish :15 min
Use a pan , heat olive oil. place the fish on the pan at medium to low heat .
in a small container mix a little of white wine, capers , olives ( as much or little as you like ) and the juice of 2 lemons
damp it all on top of the fish . when fish is soft and cooked it is ready to serve.

steam broccoly.
In the same pan that you made the fish , cook 1 or 2 cans of sweet peas. use salt to taste and plenty of red pepper (it has an extra kick)

Serve the fish on the plates, capers and olives on top

Broccoli and peas on the side.

Serve with white wine

Dessert: 20 Minutes.

While the fish is cooking open " Puff Pastry sheets"( buy it in the supermarket in the frozen section)
They come in 3 rectangular pieces each sheet. cut the 3 pieces from each sheet . Make a cross with 2 of them . in the center, place cut strawberries and apples (1/2 apple is plenty-peel the apple first ) sprinkle with plenty of sugar, fold the points of the cross to make the edges leaving the fruit exposed in the center ( like a danish)and so the fruit doesn't fall from the pocket . Place in oven at 400 F for 22 minutes ( let it cook while you have dinner) Take out when is golden. The place will smell heavenly!

Salad with tiny shrimp, egg, and thousand Island dressing
Baked potatoes
creme brulee

2. Spinach salad with a chutney dressing
Baked zuchinni casserole
sourdough whole wheat bread with honey butter
apple strudel

3. Chicken and asparagas crepes with an asiago cheese sauce
spinach or baby lettuce salad with vinegrette
chocolate mousse

Of course you only want to make what you will like. The most romantic meal you can make is what you both love to eat... If that means Lucky Charms cereal then so be it. Candle light can even make breakfast cereal fun and romantic.

You got a lotta answers, but be sure to include a desert. Sharing a desert can be very romantic. Try something simple as fresh strawberries dipped in whipped cream. Something chocolaty can be a good aphrodisiac also. Good Luck.

I'm sure any meal you make, your partner will love. Perhaps make one of his fav. meals that you havn't made in such a long time.(Something when you were first dating.... Think back to something he really enjoyed and make that., for dessert..also make something you havn't made in quite sometime that he really enjoyed* (perhaps strawberries and whip cream which you can "share" together very romantically* (wink)
add some lit scented candles, bottle of his fav. wine , wear something "comfortable" and enjoy your Romantic Dinner for 2*

okay go to the mall depends where ur from and go see a movie and go to dinner then to dave and buster or go see a movie then go to dave and buster and eat there and lie that ur gonna go to the mens restroom but say the bathroom is brokin and go down stairs and by her sum thing she wants i'm sure the person will be happy to have sum one special like u

how about snow crab legs, with drawn butter, cocktail sauce, shrimp cocktail, or crab cakes, with steamed new potatoes with parsley and rosemary, asparagus with parmesan and a nice chocolate mousse for desert? And a nice white wine If you are not a seafood fan, how about roasted cornish hens stuffed with wild rice, served with potato, eggplant, onions and peppers roasted along side the hens
