1 Servings

10 Kg apples,sweet ones, ripe
1 vanilla stick
15 g pectin

Wash, quarter, core the apples, cut into coarse slices. Boil the apples in nearly no water until they are cooked. Put the apples on a suitable cloth and squeeze the juice out. Boil the juice with the sliced vanilla stick and the pectin.

1 lb tart apples, peeled and sliced
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon mace
2 tablespoons lemon juice, bottled
1/4 cup unsalted butter
1 cup brown sugar
1 teaspoon pure vanilla extract
1 cup apple cider or water
1 tablespoon Grand Marnier
1 tablespoon cornstarch
1 teaspoon cornstarch
1/4 cup water

Put prepared apples, cinnamon, nutmeg, mace, lemon juice and butter into a deep pot.
Cover and cook apples on medium heat until softened.
Puree the softened apples.
Place the pureed apples back into the pot.
Add the remaining ingredients, except for the cornstarch and 1/4 cup of water.
Stir until the sugar is dissolved and the mixture starts to boil.
Allow to boil for 5 minutes.
Mix the cornstarch with 1/4 cup of water, until all cornstarch is dissolved.
Stir into syrup mixture and cook until slightly thickened.
Pour into jar and refrigerate.

In a large pot, bring the cider to a boil over medium-high heat. Boil the cider until it has reduced to a thin syrup (you should have about 1/2 cup), approximately 25 minutes. Cool and store at room temperature.

My father-in-law was from Denmark and this was his favorite apple syrup. He loved it served over aebleskivers, which are Danish pancakes. The dough is fried with a piece of apple stuck in the center and served with apple syrup. The aebleskivers are cooked in a cast iron pan with seven round indentations that fits over a stove burner and fries the cakes to golden perfection


Apple syrup

1 cup sugar
2 tablespoons corn starch
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1 pint apple juice
Splash of lemon
1/4 cup butter

Combine all ingredients and then heat over medium heat until desired thickness. Serve warm.

I don't usually make apple syrup, but it has occurred to me that you can probably do this by taking apple cider, finely chopping an apple, and cooking them together with sugar, cinnamon and a little lemon juice until reduced and thickened.
