penut butter and jellie. you should try cooking like the night before like a pasta with marinara and then take it in a tuperwear the next day im vegan too.

I would say that taking sandwiches with yogurt is the best and easiest thing to do for someone in school. You can switch it up between cheese and onion, or cheese, lettuce, tomato, mayo, honey mustard, or pb&j, or a countless number of other options along with either a bag of chips or some yogurt. I think that's the easiest and quickest lunch esp not only in preparing time but also eating time. I've been a vegetarian all my life and it's worked for me. :o)

there are substitutes for sandwich meats that you can usually buy at your local grocery chain, veggie and dips, if allowed nuts at school trail mixes are good if not buy the stuff without nuts. Or you can go to the bulk section of your grocery store and buy a bunch of dried fruits and such for a trail mix. And if you are in a mad dash you can at least consume a "boost" product or "ensure" but make sure to have some fresh fruit or veggies on hand with that for some fibre.

I am a vegetarian as well and I ussually end up bringing some kind of sandwich for lunch ...easiest of course is peanut butter and jelly. I try to mix it up on different breads so i don't get tired of it...like whole wheat one day, then bagel or pita another day. I also sometimes bring yogurt and an energy bar for something different. Another great thing I bring for lunch sometimes is veggie wraps...here are some of my favorite recipes...they both are easy to make and pack well...
Crunchy Veggie Tortilla Wraps
1/4 cup tub-style fat free cream cheese
4 8-inch fat-free flour tortillas
4 clean raw spinach leaves (other good-quality lettuces work just as well)
1 cup alfalfa sprouts
1 cup shredded red cabbage
1/2 cup chopped tomatoes
1/4 cup crumbled feta cheese (or any other crumbly cheese(blue, for instance)
2 tablespoons finely diced red onions
Spread 1 tbs cream cheese over each tortilla; top each with a piece of spinach.
Divide sprouts and remaining ingredients evenly among tortillas; roll up.
Cut each wrap in half diagonally.
Veggie Wrap Up
4 ounces cream cheese spread
1 medium carrot, grated
1 tablespoon cumin
4 whole-wheat tortillas (8 or 9 inch)
8 large romaine lettuce leaves
1 medium zucchini
1 medium sweet red pepper
2 tablespoons pine nuts, toasted
Picnic Sandwiches
Combine cream cheese, grated carrot and cummin, in a bowl, stir until well combined.
Spread 1/4 of the cheese mixture on each of the 4 wraps.
Leaving 2 inches bare at the bottom of the wrap.
Press 2 lettuce leaves on top of cheese mixture on each wrap.
Cut the ends off the zucchini, do not peel, cut in half, cut each half into sticks, divide the sticks among the 4 wraps and place down the middle of the wrap, to one side.
Cut in half and seed the sweet red pepper, slice the halves into sticks, divide between the 4 wraps and place beside the zucchini, in the middle of the wrap.
Place the pine nuts on a cutting board.
With a chef's knife, press the flat side of the knife on the pine nuts until most of the nuts are cracked.
Sprinkle 1/4 of the cracked nuts over each wrap.
To wrap: Fold the bottom of the wrap up over the contents, holding it there while you fold the side over, then the other side overlapping the first side.
Take a paper towel or napkin and wrap it around the bottom half of the wrap to hold it together.
There will be an open"V" at the top of the front side.

I pack a hot thermos lunch for my 12 year old veggi daughter every day. But a good thermos, one with a mirror lining, like thermos brand or aladin. I pack soups, mac and cheese, stir fry rice, cous cous, veggie stew, mashed potato and gravy, etc. I pack crackers or a cheese and cucumber sandwish to go with it, and bottled water or juice. Sometimes, she likes cereal for lunch, so I pack the milk in the thermos, and the cereal in another container so she can make it at school. The stuff in school food is disgusting-full of toxic chemicals, preservatives and dyes (red food dye is made from crushed choclear beatles) I also pack lots of salads and veggies with dips or hummus

Sautee some eggplant, bell peppers, tomatoes and then pour some boiling lemon juice over that. Take that in a lunch box and then eat some bread with it. don't make a sandwich with it until u are ready to eat it so it won't get soggy. Pita bread is recomended. This meal is recomended to be eaten at room temp, so no worries.

If you school has a microwave you can use try Amy's Kitchen meals. Their aweseome and what I take to work for lunch and a lot of grocery stores care them in the frozen food or vegan/vegetarian part of the store (at least around here they do)

LOL..strange name for a vegetarian. Skittles is not a vegetarian food (in the US anyway)
Anyhoo...how about pasta salad, PB &J, BLT made with soy bacon, avocado, tomato, onion and salsa wrap, egg salad?

I had this lunch a couple of days ago and it was gorgeous. Get yourself a box with little compartments in it - like a bento box - and try these yummy salads:
*Grated carrot, courgettes, sesame seeds & french dressing
*Cooked spiral pasta, chopped up sundried tomatoes, olives & french dressing
*Coucous, raisins, some ground cumin & coriander, chopped parsley & french dressing.
You can make up bowls of these, leave in the fridge, and they will do you for 2-3 days. So yummy.

I like smoked mozzarella with tomato and basil on bagels/bread. I also like salad with hard boiled eggs, mushrooms and carrots. How bout grilled cheese sandwiches with or without raw veggies on the side?
