Vegetable Curry
Good curry powder, frozen mixed vegetables partially thawed in the micro wave. Cream of coconut and heavy cream
Saute chopped onions and garlic in a pan with olive oil or corn oil. Add curry powder to soak up the oil. Add thawed vegetables, cream, and cream of coconut and cover for about 25 mins. You can separately make some rice. Toss rice into the vegetable mixture and refrigerate.

this one is always a hit and very easy. the leftovers are good for making casseroles, too. and a lack of refrigeration isn't a problem since you make it with some frozen corn that defrosts in transit. if it is made the night before, and refrigerated, the flavors mingle and are enhanced, but it doesn't have that marvelous fresh flavor with a pop that it gets if made the same day.
mix together:
rinsed black or turtle beans (canned is ok)
a jar of salsa
some additional green onion and chilis (diced) if desired
frozen corn
chopped green pepper
chopped white onion
chopped tomatoes
practically anything else that appeals to you, such as sliced black olives, that you'd like in a mexican salad or 'dip'
serve with taco chips but it can be eaten as a salad, also.
if you are feeling extravagent, serve some sour cream and/or guacamole on the side.
if you refrigerate the salsa ahead of time, and use frozen corn, it will still be nice and cool when you get to the shindig, and will stay that way for awhile.
i seldom bring any of this home so i guess it's a hit, and it provides a good protein AND veggie source, along with grains in the chips, for everyone.

I have a great recipe that is quick to make and super cheap--plus i feed it to all my non-veg friends and they gobble it up!
Daniel's Cheapo Chili
1 can pinto beans
1 can dark red kidney beans
1 can black beans (mexican flavor is fine)
1 larger can tomato sauce
2 cans rotel (I always buy the generic version)
1 can crushed tomatoes (if you like extra tomato)
1 packet chili seasoning
1 C instant brown rice
1-2 T Italian seasoning
Stir all the ingredients together in a big pot (it makes more than a gallon) and simmer until the rice is cooked (about 15 minutes). As the recipe stands, it's vegan, but you can also add one package of Morningstar Farms veggie crumbles for the "meat" at the end. They'll never know it's not hamburger! I also like mine with cheese on top... clearly I'm not vegan. If you like extra spice, stir in some cayenne.

Go to a health food store and purchase gluten free pasta--bow ties,
and vegetarian spaghetti sauce. Buy broccoli and mushrooms, garlic, and Italian seasonings, olive oil.
Fry vegetables in olive oil and add sauce. Boil bow ties.
Get a lasagna pan and place a spoonful of sauce on the bottom then add a layer of bow ties and then a layer of sauce and continue until you run out. Top with vegetarian cheese and bake in the oven for 30 minutes--cover with aluminum foil.

You could throw together an easy chili, cook it overnight in a crockpot, and serve it with cornbread. That would eliminate the storage problem, and you could just plug the pot back in when you got to your destination. I do this often, and transport it in a cooler lined with dishtowels. Just throw in some canned beans (rinsed) chili seasoning or sauce, and some diced onions and peppers and you are good to go. Its pretty hard to mess up chili, especially done in a crockpot

"Baked Macaroni and Cheese"

Episode: For Whom the Cheese Melts 2
1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup panko bread crumbs
Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
Remember to save leftovers for fried Macaroni and Cheese.

Vegetarian lasagna is an excellent choice! If you don't like to cook, Stouffer's makes an excellent one. You can get a large party size at
Walmart or Sam's club.

Hummus is so tasty and nutritious, and you can buy crackers, chips, or cut-up veggies to serve with it. It's also very filling, and could stand in for a main dish.
