I could really use some recipies, that use tofu/soy since i'm not getting enough protein. I have been a vegetarian for over a year now, but i've been eating alot of Boca and Morning Star products. I really would like to make a wrap, somthing similar to Applebees Oriental Chicken Wrap, since I used to enjoy that. I don't have any fancy stores around me, to get the hard to find ingredients. All I have is Cub Foods and a Rainbow Fresh. Anyone have some recipies for me?

Have you got a Target near by? I highly recommend their cheapo $30 dehydrator. You can sometimes spot it on sale for $15.

You want killer wraps, dehydrate some tofu. Skip Boca and Morning star. Way too many chemicals.

Get some Soy Vey teriyaki sauce. Slice up a chunk of firm or extra firm tofu and marinate it in the sauce. Be sure to save some sauce for your wraps. Yum YUMMY.

Marinate for a day. Longer is just fine. Then dehydrate to the texture you like. I go for about a day. It's nice and chewy.

You can use red leaf butter lettuce in a wrap with several chunks of your newly made "soy jerky." Yum Yum!

Mixed Baby Greens and Balsamic Vinaigrette Wrap

1 whole wheat tortilla
1 large pinch broccoli sprouts
1 handful herb salad
1 tbsp extra virgin olive oil
Balsamic vinegar
1 tomato (optional)
2 slices fresh mozzerella (optional)

Herb salads can be purchased in a bag at the store, or you can make your own. They consist of mixed baby greens and fresh herbs like parsley, dill, and cilantro.

Pile all ingredients on your tortilla and sprinkle with balsamic vingar and olive oil. Then fold your tortilla into a wrap. Eat this over a plate and use any balsamic vinegar that drips out the bottom as dipping sauce.

Tips
Omit the tortilla to turn this simple vegetarian recipe into a delicious salad.

Look on the label of your tortillas before buying to make sure they do not contain any trans fats.

Cucumber and Apricot Sandwiches
Source: Better Homes and Gardens
Makes 4 sandwiches

Start to Finish: 15 minutes
Ingredients
1 large cucumber
1/2 of an 8-ounce package reduced-fat cream cheese (Neufchatel)
2 tablespoons snipped fresh basil
8 slices firm-textured whole wheat bread
2 large apricots or 1 nectarine, pitted and thinly sliced
1/2 cup arugula leaves or cilantro sprigs

Directions
1. Peel cucumber. Cut cucumber in half lengthwise and scoop out seeds. Thinly slice cucumber; set aside. In a small bowl stir together the cream cheese, basil, and, if desired, 1/8 teaspoon salt.
2. Spread about 1 tablespoon cheese mixture on one side of each bread slice. Top four bread slices with cucumber, apricot, and arugula. Top with remaining bread slices, cream cheese side down. To serve, cut each sandwich in half diagonally. Makes 4 sandwiches

i make a great burrito out of morning star farms mealstarters chik'n strips.
i buy chicken helper cheesy enchilada mix obviously substitute with the chik'n strips
then i put some of that, black beans (also great protein), sour cream, cheese and some home made guacamole and roll it up.
its fantastic!!!

those chicken strips can be used with just about anything
some fresh lettuce, shredded cheese, matchstick carrots, a little mayo and thats another easy wrap.

i also make a stir fry with some blocked tofu and some frozen stir fry veggies and tri color rotini fried up with some fresh cloved garlic and soy sauce!

Brown Rice Wrap

* 1 medium red or green bell pepper, diced
* 1 cup sliced fresh mushrooms
* 2 garlic cloves, minced
* 1 tablespoon olive oil
* 2 cups cooked brown rice
* 1 (16 ounce) can kidney beans, rinsed and drained
* 1 cup frozen corn, thawed
* 1/4 cup chopped green onions
* 1/2 teaspoon ground cumin
* 1/2 teaspoon pepper
* 1/4 teaspoon salt
* 6 (8 inch) flour tortillas, warmed
* 1/2 cup shredded reduced-fat Cheddar cheese
* 3/4 cup salsa

1. In a large nonstick skillet, saute the red pepper, mushrooms and garlic in oil until tender. Add the rice, beans, corn, green onions, cumin, pepper and salt. Cook and stir for 4-6 minutes or until heated through.
2. Spoon 3/4 cup onto each tortilla. Sprinkle with cheese; drizzle with salsa. Fold sides of tortilla over filling; serve immediately.


Greek Hero
* 2 tablespoons lemon juice
* 1 tablespoon olive or canola oil
* 1 (15 ounce) can garbanzo beans or chickpeas, rinsed and drained
* 2 garlic cloves, minced
* 1 teaspoon dried oregano
* 1/4 teaspoon salt
* 1/8 teaspoon pepper
* SANDWICH:
* 1 (8 ounce) loaf French baguette
* 2 medium sweet red peppers, cut into thin strips
* 1/2 medium cucumber, sliced
* 2 small tomatoes, sliced
* 1/4 cup thinly sliced red onion
* 1/4 cup chopped ripe olives
* 1/4 cup chopped pimento-stuffed olives
* 1/2 cup crumbled feta cheese
* 4 lettuce leaves

1. For hummus, place the lemon juice, oil and beans in a food processor; cover and process until smooth. Add garlic, oregano, salt and pepper; mix well.
2. Slice bread in half horizontally. Carefully hollow out bottom half, leaving a 1/2-in shell. Spread hummus into shell. Layer with the red peppers, cucumber, tomatoes, onion, olives, cheese and lettuce. Replace bread top. Cut into four portions.

If I were you, I would mix up some black beans, corn, diced tomatoes, minced jalepenos (remove the seeds), lime juice, cilantro (if you can't get it fresh you can usually get it in single-serving frozen cubes) and a dash of hot sauce. I would put that mixture in a wrap with some brown rice (or even better, quinoa). You could dip it in salsa or guacamole if you wanted.
