i need to make something for diner tommrow because an old friend is comming to vist but she is vegan. i really can't cook so i need something easy and vegan. thanks.

I buy some vegan hot dogs (Lightlife seems to be in lots of stores) and Bush's vegetarian baked beans....slice up the "dogs," put them in the beans in a pot on the stove eye...in a few minutes, you'll have vegan franks n' beans:)

This one is a favorite of mine.

You'll need a leek, some kale (dinosaur is a favorite, but red makes for a lovely dish) and some medium tofu. If you like, whole wheat pita bread to put it in, or to serve on the side. If you have a Trader Joe's anywhere near by, their sundried tomato pesto is great for dipping pita in. While you're at Trader Joe's pick up pine nuts. Those go GREAT sprinkled on top of this dish.

Tamari or soy sauce is good, but not necessary. Turmeric (spice) is also good but not necessary.

You should be able to pick up kale for 1.99 a bunch. One bunch should feed two people unless you over cook it. So you might want to get two bunches just to be safe.

The leek is purely for flavor.

Wash your veggies.

Slice off the root end of the leek. The chop it. Keep it in the rings just for looks. The bright white circles look pretty in the green veggies. You're only cutting the white part. If you like, save a few of the pretty green leaves for garnish.

Chop up the kale. If using red kale, you might want to toss out the long stalks. They take longer to cook. I like to slice it into long ribbons from end to end. That just makes it pretty. It's not important.

You can use either olive oil or water to cook in. Water is healthier. But olive oil gives more flavor.

Heat your oil or water on a medium heat in a skillet. If you've got the Turmeric, add it now. Turmeric is more flavorful the longer it cooks.

Toss in the leek. If you're using water, add a little tamari or soy sauce. One or two teaspoons. Saute the leek for about 10 minutes. Leek has a very mild onion flavor. You can cook it more if you dislike onion. The flavor dies down a bit.

Then add the Kale. Saute another 10 minutes. If you want to add spices, now is a good time to do so. Basil goes nice in this dish. Especially if you have the sundried tomato pesto for the side.

Tofu is already cooked. It really only needs to be warmed. Add the tofu. Use your spoon to break it up. The turmeric will make it turn yellow. Don't freak out.

This is a lovely one pot, one bowl meal. Meaning, you cook it in one pot and serve it in one bowl. A plate is fine too.

If you've got the sundried tomato pesto, use a plate. If not, use a bowl. If using a plate, put a nice big scoop of the pesto in a tiny bowl on the side of your main dish. For dipping.

Slice one pita round in half. Layer the two halves one on top of the other on one side of the plate. Your main dish on the other. I like my pita lightly toasted. If you saves the leek greens for garnish, tuck a few greens under the pita.

If you're using a bowl, then just tuck one half of pita into the bowl.

If you've got the pine nuts, sprinkle them on top just before serving. Put a bowl of extra on the table with a little spoon in the bowl. Like parmesan cheese.

Refried beans are often made w/out lard, and tortillas are, as well. Get a Mexican rice mix(read the labels), a green salad, and some fruit for dessert; you'll be good to go.

Stur Fry Vegtables with rice and beans
Easy and gives you all your neutriants [yea I need spell check]
But anyway you mix them together and if you like put soy sauce on it.

Spaghetti. Read sauce labels. Prego & Ragu have some without cheese, milk & meat.

Stir fry chinese. Make rice & buy bags of frozen, pre-cut veggies to heat.

try to do some " oven baked vegetables" with rice on the side with a soy sauce or sour sauce.

it could be anything like red pepper, green pepper, small sweet corn, broccoli, .....
