It is a really hot, sour mash of fish and spices, usually eaten on crackers. I tried it on a vacation and loved it. Anyways, I have a recipe which calls the use of a fish called "Corvina." Does anyone know what it would be called in English? Does anyone know where it could be found?

White Sea Bass - that's what Corvina is, but I don't know where you can buy it so you can call your local fish markets or high end grocery stores like Whole Foods, as they usually carry more than the usual stuff ... Also, ceviche doesn't have to hot. It depends on who makes it, and what region of Mexico the person who makes it is from (not to say that only Mexican's can make it, but ceviche is made differently from state to state).

I use shrimp, red snapper, abalone or tilapia to make mine. If you really liked the Corvina, and you can't find it, you can replace with any firm, white fleshed fish though.

Corvina is a general name for a boatload (pardon the expression) of fish found in many different parts of the world. They belong to the scaienidae family, which is better known as "drums or croakers." Drum fish and croaker fish are differentiated by whether they produce a drumming sound or a croaking sound when they pop their heads above the water (we're not making this up). There are 270 species within the drums and croakers family, ranging from less than a quarter of a pound to hundreds of pounds. In Central America alone, there are dozens of varieties.

You can use lots of different kinds of fish. I like Shrimp Ceviche the best.

"Corvina ", or White Sea Bass. The corvina is only found in the Pacific. It has firm, white flesh therefore it makes the greatest "ceviche". Ceviche can also be prepared with other fish, but make sure it is white and firm otherwise it will fall apart when cooked with the lime juice. Other fish and seafood that are popular for making ceviche are mero, scallops, lobster, shrimp, clams, oysters and shark.

"Ceviche" is any meaty fish that is put raw into lime juice or lemon juice and 'cooked' by the acid in the juice.

"Corvina" are a Spanish fish in the Croaker/Drum family so could be approximated using Atlantic Croaker, Black Drum, Red Drum, Kingfish, Spot, Spotted or Speckled Sea Trout, Weakfish, or White Sea Bass, etc., but anything with firm flesh will work.

No I dont know where you could fine this particular fish. How ever I know you could replace this fish with shrimps.wash shrimps reall well,take tails and shell off,squeeze in large bowl lemon juice (12) lime lemons,cut up some celery,tomatoes,purple onions,avocado,cucumber,and clamato juice in one bowl.Before cutiing shrimps boil water salt in it and when in full boil put shrimps in really quick take them out cut in half and put in lemonized bowl and add all veggies and wala!! You've made shrimp ceviche=Ceviche de Camarones enjoy hope you like as much as i do. Serve on tostada shells (corn) always corn .

the best ceviche is made with shrimp..and we eat it on tostadas with lots of fresh avocado!! it would be easier than fish..

You can use any light fish like snapper, halibut or shrimp.
