Whenever I eat sushi, I always ask for the Chef's Special Roll. They may not even have anything like that on the menu. I just tell the chef to make anything he likes. This gives them a chance to be creative and think outside the things they make day in and day out. They seem to appreciate the break from routine and the result always comes out amazing!

Besides that, try Spicy Scallop handrolls and Spider Rolls (with soft shell crab).

California Rolls are always a favorite, but I also love the Inari Sushi, which is a sweet deep fried sheet of tofu wrapped around sushi rice. Good stuff.

Negiri Sushi is really my favorite. Whatever type of fish or shellfish it's made with doesn't really matter although Unagi (eel) is very good. But for the regular Rice and Nori rolls I like Smoked Salmon in creamed cheese for a filler. It is devine.

Crunch rolls, Philly rolls, Spicy tuna rolls, Caterpillar rolls, there are so many depending on where you go. Try getting something that sounds close to what you get, but a little different (if you like California rolls, try crunch rolls). Expand from there.
If you really love sushi, try fatty tuna, salmon, red snapper (these are rare to find), and tuna.
Mmm... I'm getting hungry.

I have three favorites I kinda made up:

1. shrimp tempura on the inside of an inside out roll. then, on the outside, alternate avocado and albacore. then, topped with green onions, tobiko, and BBQ sauce (like they use for unagi). YUM.

2. Crispy cooked smoked salmon skin on the inside (with green onion) of an inside out roll, smoken salmon on top, topped with ikura.

3. Spicy Avocado Tempura hand roll.

Some other recommendations:

Albacore tataki
Menchi katsu
Hamachi belly (better than regular hamachi)

What's the same ol' thing?

I like unagi (Broiled eel with a sweet teriyaki glaze).
Taki (Ocotpus), Futomaki (Big Roll), Ika (Squid), Saba (Mackerel) and tuna (Toro and Maguro).

I terms of specialty rolls - the ones with tempura rolled in it... but don't order them too often.

Eel sushi is my favorite. I also like mackerel.
Octopus, in my opinion, is like a rubber tire.

i lived in japan for 3 years and i have to say the best ones are the triangle shaped ones with tuna in the middle, the one were there is rice at the bottom and raw tuna at the top, and sushimi(just raw fish...the tuna is the best with lots of soy sauce)
