Oh dear, what a dilemma! I think if I had one in that condition and one end of it was showing signs of going moist I'd cut that bit off and do away with it altogether. I'd then concentrate on putting the good end to use, and with that I could either slice it up in a salad or sandwiches or make whirls out of using one of those fancy screw cutters and then use it as a food decoration or garnish. I've found that by using two like this you can get ten out of them.

natural yoghurt, fresh mint, lemon juice, salt and pepper mixed with the cucumber, my fave treat with rice cakes, on curry or with salad. YUMMMEEEE

Slice it up and drizzle some italian dressing on it or put it in a salad. I know of no other uses then in salad.
