First off, don't try to do something you can't. Instead, make something that will complement his tortilla (a great dish). If you do grill well, then grill well and forget what you "don't want to do" The relationship between boss and employee should be compatible. Your meal should reflect that. Prepare a savory salad and/ or soup, some apps and a dessert. If you grill a mean BBQ chicken, do so. Supply some nice wine or liquor but don't try to be "Spanish" about it. Get what you know or say "I hear this is great", if that is what you hear. Again, it's about the items complementing, not competing or showing. Good luck and have fun!!

Why not a small pork loin?You can put your veggies and the meat in the oven together.That will give you time for a little socialization before Dinner.A salad,potato au gratins,veggies,pork loin,dinner rolls,and wine(or tea)for Dinner.Then a nice chocolate mouse for dessert,lite but can be made ahead of time.All the meal(except the salad) can be timed to come out of the oven at the same time..Have a great Dinner and evening....

peal and cut up some potatoes and beef sausage and bake that together. Yes its a poor persons meal but -- your boss will get the message that you need a raise and you wont have to worry about the boss freeloading off of you and if your bosses dish a quiche
then it is an american version certainly not what I have had in Barcelona or Rota

prepare natural raw meals ............... green and fresh like salads......of 5 to 10 types. Some rare juices. Everything vegetarian and made with fruits, vegetables and cereals. There are many american recepies for green natural food.
Such food leaves our body and mind fresh, gives a great light feeling.
It would be a change frm the stereotype meals and ofcourse would set a gr8 impression.

If you want to make something "American" ......try putting chicken or porkchops or roast of beef into the crockpot. Add diced onion, carrots, salt/pepper...bbq sauce or chicken sauce and a bit of water...let sit for 6hrs on low.......make up some 5min. white rice to go with it, french loaf and salad bowl. That way you and your wife arn't having to fuss around in the kitchen other than to make the rice and slice the bread.
or
Make a big pot of chilli with Tortiilia chips,...put out sour cream, grated cheese, green onion, for toppings....have some french bread or italian loaf

Be sure to ask if either of them are allergic to anything or vegetarian! If so, ask what exactly they can eat.
Every part of the US has certain regional dishes-ex. Lousiana has jumbo, the Pacific Northwest has seafood. Consider where you are from. What is "traditional" for your area/state? Perhaps you should try fixing some of your regional dishes.

I would go with the sunday dinner dish that is your specialty. this is really not a good time to try something new.

make a slow cooked roast (cooked for a good 11 hours) with roasted potatos, any type of veg I suggest asparagus with a alfredo sauce and a nice dessert.
