My new favorite for spring is to grill zucchini and mushrooms outdoors and then toss with diced plum (Italian) tomatoes, scallions (green onions), and quartered artichoke hearts. I make a quick dressing with olive oil, tarragon vinegar (or whatever vinegar you prefer), garlic, salt, pepper and fresh garden herbs. The warm veggies soak up the flavors. You can have it as a side dish or over mixed greens. Top with Feta cheese. Travels well for work lunches too.

Baby carrots are my favorite veggie.
However, when I'm ready for a change I really love to make 2 piles of chopped up carrots & beets on a salad of baby greens with any other veggie on hand and use Tahini Salad dressing.
Raw beets, sliced thin are also great on sandwiches.

I cook mine in coconut milk, with garlic, ginger, onion, lemon zest, and whole chillies (so they don't become too hot), add fried tofu, and a little salt. Yummy!

broccoli, cauliflower, baby carrots, alfalfa sprouts , garbanzo beans, black olives, green pepper, pickles, purple onion rings, or jus fine cut onions, squash, zucchini, jalapenos, red pepper rings, yellow pepper rings
u could make a salad, lasagna, soup, really anything, casserole
