I would definitely marinate it after.

Tofu is filled with water. The water stays on the inside when everything is normal. In when freezing (and more importantly, when thawing) the water would mix with the marinade.

If you want really good flavour, you can let it soak in the sauce in the fridge for several hours.

Any recipe I have ever seen that asks you to freeze tofu says to use the sauce/marinade etc. after.

I was just on the Mori-Nu website this morning. They suggest that you freeze it first and marinate it after you defrost. They also recommend that you use a thick marinade in order for the flavor to get fully soaked in after it's been frozen.

Hope that helps!
