Well, if you're into watermelon (which I think you are, based on your earlier post regarding watermelon cream cheese), you could have a Watermelonparty. But if you're into citrus, have a Lemonparty. Join the FuN!

How about pineapples. You could decorate with a tropical Hawaiian type theme. Why one fruit? Go for the whole lot of them pineapples, bananas, coconuts.

Lemon. THey are so versatile in food-you can use them for desserts or savory dishes and appetizers. It will create better balance in the menu. If you choose a fruit that is only sweet-such as strawberries-you will only get sweets. Go with Lemon. Be sure to put recipe ideas (such as the list below) on your invitation if it is a potluck.
Peel and eat shrimp with lemon,
Lemon margaritas,
Lemon squares,
Lemon chicken,
Lemonade,
you get the idea.
