I made chili dogs (using hormel vegetarian chili and morningstar farms hot dogs) for my superbowl party. Everyone loved them (except the dork that was allergic to soy and ate 'em anyway!).

You might try something with Quorn too. It's texture and taste is very similar to chicken... meat-eaters love it!

If you're not into the meat substitutes, maybe whip up a stir fry. Or do some homemade mac n cheese or a great soup with crusty bread.

I've been a vegetarian for 3 years now and one of my favorites besides Italian cuisine includes Japanese, where you could make vegetable sushi rolls or noodles, Mexican, who says you have to have beef or chicken in tacos, nachos or enchiladas? There's always substitutions you can make using boca and gardenfarm products. Another easy one would be subs. You can purchase soy ham\turkey products from your nearest grocery store and substitute these for the real meat. Other foods include the classic eggplant parmesean, or substitute it with portebella mushroom. Or even have a classic all american night with Boca chicken patties, or chicken nuggets or even hot dogs!!
good luck & i didn't mean to sound like an advertisement.

My meat-eating friend now asks me to make this for her every year for her birthday.

:)

Mexican Dip (vegan)

* Vegetarian refried beans

* Jar of medium salsa

* Layer of taco ground
----- YIVES vegan ground (if not available, use Bocca or Morning Star Farms
------Cook in frying pan and add taco seasoning (follow ingredients on the package
------ Fry with diced onions

* Homemade quacamoli
------ 2 avacados, lemon juice, diced onions and tomatoes, garlic salt
------ mix together in a bowl

In a 9x9 container, create a layer of each. I put the taco mix on bottom, then guacamole, then beans and salsa (looks prettiest) on top

Get a slice of tofutti cheese and cut it into tiny shreds; sprinkle on top for aesthetics.
Bring tortilla chips

I made it for a work party, and no one had a clue it was vegan.

I just made Panang Curry and it was delish and vegan. I stir fried tofu, snow peas, bok choy, broccoli, and carrots. Then I added a can of coconut milk with panang curry paste (make sure it doesn't have fish by product in it). I added yellow curry powder and cooked, cubed potatoes. It was filling, colorful, and really tasty. Serve with rice or rice noodles.

Winter squash is one of my faves. Stuff it with cous cous and cranberries and walnuts and brown sugar if you want... but I like to serve that to non-veg guests because it is not intimidating. Most people like winter squash. Acorn squash is my fave. Cut in half, cover in foil and bake in oven for 45 minutes or so with a little water in the pan.
Another one I like is quinoa salad with cilantro and bosc pear and mandarin orange, with a little olive oil and some cilantro (not too much!!) and watercress. That is darn tasty. (cook quinoa and mix other stuff seperately, and then mix it all together.)
