Soy sauce does not have to be stored in the fridge at all, just a dry, dark cabinet or shelf. I would keep the soy sauce you already have in the fridge in the fridge though, just in case, and then put any newer bottles out in a cabinet. And no, I don't think that you will have a problem with that one bottle left out overnight.

From my experience, no. I've known some restaurants where it stays on the table constantly. My parents keep theirs on the counter, and there have been no resulting health problems from it. However, I have noticed a disclaimer on some soy sauce brands stating to refrigerate after opening. Honestly, if you have room in your fridge put it in, after all the disclaimer is there for a reason. If you forget every once in a while it is not going to immediately kill you.

I'm Chinese and soy sauce was always packaged in bottles and never put in the fridge, rather yet it was stored in room temperature, and it has no effect on the soy sauce.
