Being a former chef and having made it several times and working with people from Hungry, it is not Hamburger Helper, "Goulash"s a form of the word Gouyas, the Hungarian word for Sheperd.
It is a simmered stew made from beef, either round, chuck or I use cross cut rib steaks, it is a mixture of meat, onions, tomatos or sauce, garlic, some like green peppers like in Paprikash, spiced with caraway and bay leafs.
You saute the beef take it out, then cook the onions, caraway, garlic, add the beef back, a touch of beef broth and then tomato product, simmered for 1 1/2 to 2 hours, it is a good crockpot dish, serve over noodles, mashed potatos or a dumpling made in Europe called "Spatazle or Knodel".

yes,basically homemade hamburger helper,but tastes better. hamburger or any meat(traditionally beef) you choose,macaroni or similar pasta,some tomatoes or tomato sauce,onions,peppers and spiced to taste.
edit. the stew that is being referred to by others is called marha porkolt(stewed beef) in hungary. goulash comes from the word gulyas,pronounced goo-yash .
