Courgette Ribbon Pasta with Mushroom and Cream

This is a very satisfying low-carb version of pappardelle
Serves 2

450 g (1lb) medium courgettes, washed and trimmed
Olive oil

For the Sauce:
1 tbs olive oil
15g vegan margarine
225g (8oz) button mushroom, washed and halved
1 garlic clove, peeled and crushed
4 tbs soy cream
Salt, freshly ground black pepper, grated nutmeg

Start with the sauce.
Heat the olive oil and vegan margarine in a pan, put in the mushrooms and cook for 3-4 minutes, then stir in the garlic. Add the cream and bubble over the heat for 2-3 minutes until slightly reduced. Season to taste with salt, pepper and grated nutmeg, set aside.

Bring half a saucepan of water to the boil. Meanwhile cut the courgettes into long, thin ribbons by running a potato peeler down the length of each courgette. Put the strips into the boiling water, bring back to the boil and cook for two minutes or until al dente. Drain immediately and return to the pan.

Reheat the sauce. Either add the sauce to the courgettes and mix well, or toss the courgettes in a little olive oil, serve out onto plates and top with the mushroom mixture.

Saag Paneer

1Onion
6 clovesGarlic
1 ozFresh Ginger
1 lbFrozen Spinach, thawed
2 skinned, cut tomatoes
1 cupPlain soy Yogurt
4 ozSoymilk
2 tspRed Chili Powder
2 tspGaram Masala
1 cupHalf and Half (some milk substitute)
6 ozPaneer (use TOFU or chickpeas)
1 1/2 tspSalt

Preparation

* Grind the onion, garlic, and ginger into a fine paste.
* In a medium saucepan, combine the paste, spinach, skinned, cubed tomatoes, yogurt, soymilk, chilipowder, and garam masala. Simmer at medium heat for 20 to 30 minutes.
* Mash the ingredients with a potato masher. Add the half and half. Simmer until the mixture has a creamy consistency, 10 to 15 minutes.
* Add the cubed tofu , simmer 5 minutes. Season with salt.

This is often served with rice or flat-bread. I know people have made low-carb versions of bread products you could hopefully use.

I fix this often - my entire family loves it. So easy too!

2 - 3 zuchinnis
1 large onion
1 green pepper
1 red pepper
7-9 mushrooms
1 can stewed tomatoes
Large handful of fresh parsley
TONS of garlic
Olive oil
Little salt & pepper

Cut up all veggies and put into large bowl, liberally spash olive oil over veggies, adding can of tomotoes & salt and pepper as well. Stir well to coat and then dump the entire bowl onto a baking sheet/cookie sheet.

Bake at 350 for about an hour. All the vegetables will carmelize - it is SO YUMMY.

I serve this with wild rice, tossed green salad and bulgarian feta cheese.

How 'bout a nice green salad with some yummy veggies and a light oil and vinegar dressing.

Hopefully this is for a friend stopping by for a meal and you are trying to accomodate both while she's there. I cannot imagine trying to do low carb AND vegan for very long.

Delight Rolls
Take cabbage leaves, layer spinach leaves, layer roasted red bell peppers, & spread dip (tofu, garlic-minced, balsmic vinegar mushed togther and heated through) then roll up and fold in sides like a package and steam for about 5-8 mintinues.

your favorite vegan wrap filling (hummus, beans, eggplant, mushrooms, avocado, fake meat or anything) and replace the wrap with a big romaine lettuce leaf.
oh and this meal is low carb

Very low carb diets are VERY unhealthy for anything long-term. If you have a problem with carbs, go with a "Smart carb" diet, such as South Beach, which, by the way, has a version for veg.
