Take heed--- if you use tortillas or other breads... check to see if the ingredient list includes lard... hog fat... not a good thing to do to a vegetarian. You'll also want to check the labels on soups and refried beans, canned beans, etc., for the same thing.
Hey, just ask them what they'd like, unless you're wanting to do a surprise. And, there's always the veggie pizza party route. Di'Gourno (not sure I spelled it right) makes a great spinach pizza. Pizza Hut and some of the other pizza shops do a great veggie lover's pizza, too.

Roasted vegetable salad serves 2-4 you'll favor 3 pink onions quarted, 3 potatoes,cutinto wedges 2zucchini (corgettes) thickley sliced, 2 yellow capsicums (peppers) thickly sliced,4 tomatoes haved, 2 tablespoons olive oil, sea salt freshely floor black peper. Parmeasean shavings is (optionally obtainable)

I like to take fettuccine noodles boil until they are just done and drain. In a wok use a small amount of olive oil, chopped spinach (as much as you want), and garlic to taste- stir fry until warm. Add the noodles stir fry until fully blended and warm.

vegetarians everywhere! personally, i place the vegetarian in the freezer for three hours. this puts them in a stupor. have ready a large pot of boiling water and plunge the comatosed critters in whole. contrary to popular belief, the 'squelling' is in fact air escaping from the carapace, not yells of pain. once the vegetarian has turned a pleasaant pink, remove and plunge into a bowl of iced water. this stops the cooking immediately. after the rapid cooling, the vegetarian can be served in a variety of way. if you are feeding vegetarians, make sure u don't include any animal products such as lard, cow tongues, 'mountain oysters' or tallow. my favourite vegetarian meal is slices lightly sauted in garlic, butter and a dot of truffle oil. don't forget to salt - no one like a tasteless vego. i think you'll find serving young children is especially well received.

you can go mexican, like burritos/enchiladas if you're after an easy way out lol. I buy the wraps, usually burrito, find are nicer than enchiladas but that is a personal preference, the burrito sauce, refried beans (can) and make up rice. I cook the rice first off and then cut up some veggies to fry up on a wok (i.e capsicum, onion, mushroom etc), put a little bit of garlic in with, and then add in the burrito/taco sauce (canned). Then heat up the beans in the microwave before getting out the plates. Lay down the burrito wrap, add the veggies with the sauce, a bit of cheese and fold them up (seal with beans in the middle), a bit of sauce and a little bit of cheese on top, then do a side of rice, use discretion for serving sizes.
Then I have a stirfry I quite like, its vegetarian, put veggies on wok (i.e carrot, onion, mushrooms, capsicum etc - I usually put tofu but not necessary), fry them in say two teaspoons of garlic, then same amount of coriander (spice comes minced in tube like the lemongrass), lemongrass, and then there is ginger. Next comes the vegetable stock, add about 100 mls, a teaspoon of soy sauce, two teaspoons of curry powder, 140 mls of coconut cream (or more if required), juice of a quarter of a lime and then some dessicated coconut for flavour. Serve with rice/noodles.
ohhhh and another one I forgot. Its a fairly simple pasta dish. You fry up veggies (i.e mushroom, capsicum and onion) on wok (once again with like a teaspoon of garlic - I'm a garlic fan haha), then add in pinenuts (sometimes found in spices section, weird I know). After a few minutes of cooking those (careful not to burn pinenuts), add a can of tomato and spinach pasta bake sauce and three tablespoons of cottage cheese and mix it all together. I then make up deb mashed potato (instant packet mix, haven't tried other packs so not sure if as good as the deb brand but can always make your own up, just my cheat way).
Ok then you put the pasta into a baking dish (oops preheat the oven first at 180 degrees c), then put a thin layer of mashed potato on top of the pasta with a bit of cheese and chives (can leave out, mainly decoration). Usually make a salad to go with, personally I like mine with mushroom, lettuce, spanish onion, avocado, capsicum etc and some cheese, a little bit of lemon juice (put it on just before serving because otherwise salad goes limp).

Succotash I vegetable melody of corn, onions, red peppers, lima beans, rice, red and green bell peppers, most important the stewed tomatoes, okra, as any good chef would agree some ingredients are choice and a good Succotash would definitely include your favorite vegetables as well.

Lasagna. I use whatever veggies are available, but my favorites are zucchini, spinach, eggplant, mushrooms, and peppers (combined with the onions, garlic, and tomatoes that are standard). Whole-wheat lasagna noodles give it a nutty flavor. I use ricotta, parmesan, and mozzarella, too, but if you don't eat dairy you might want to use a substitute.
