Fusion cuisine=confusion. One should understand (and even respect) the slow evolution of any regional recipe. Things are prepared like that and with those ingredients for a reason. Just try to make beef curry, it is just wrong. I have a friend who is a reporter from Mexico and went to the White House for a state visit. The frist lady tried to please everyone and ordered fusion cusine, American-Mexican. They had for example Maryland Blue Crab pozole. My friend, and the rest of the reporters went to have dinner to a restaurant after the visit , they thought the White House food was terrible.

Fusion cuisine is the mixing of different cultures. Sometimes it works, sometimes it doesn't. For example; Wasabi mashed potatoes and wasabi crusted salmon at a sushi restaurant.
