Being vegetarian doesn't mean that people always make healthy food choices. The word 'vegetarian' can be a misnomer because there are a lot of vegetarians that dislike vegetables as well as meat.
In my experience as a naturopath, I get a lot of new vegetarians that do not have much nutritional knowledge and choose to live on eggs, cheese, processed 'vegetarian' foods, loads of pasta and bread to fill them up and fried food when they go out to eat. All of which will fatten you up pretty quickly (unless you have a super-fast metabolism, which will only usually help you out for a few decades before it catches up with you).
People become vegetarian for different reasons, so it does not automatically imply that they are 'organic' or 'healthy', although many people are.
You can have too much of a good thing, so even if people are eating organically, they can put on weight if they are making the wrong food choices (eg eating whole blocks of organic chocolate or organic bread slices dripping with organic butter).

Could be the same reason I eat cheeseburgers for breakfast and still maintain a slim physique. Metabolism baby...plain ol' metabolism.
I actually didn't realize that vegetarians ate more carbs. I thought they just didn't eat meat. Why would they eat more carbs than any other person?
Also, organic and "all natural" diets don't have anything really to do with fat content...it just means no pesticides and whatnot. Though I suppose they eat less cheeseburgers...

People have to eat the same amount of calories than they use. So if they don't exercise and eat a lot then that is how you gain weight. When you say there are "so many," how many is that anyway? I've seen a few fat vegetarians, but probably only a few percent of the vegetarians I have seen.

I don't know any fat vegetarians,it's usually the latter,Only 2% of the vegan community is obese,where the omnivore community is 18-20%.Vegetarians also have lower body mass indices.

maybe they eat chips and drink beer and soda?
