I've been trying for years to duplicate this recipe from those recipes I've found online and have yet to get it right. I friend visited an international food store in Oregon and got the Thai mix for me. It was more a paste that you just add the meat and veggies to. I didn't save the wrapper, of course, and now I've tried to duplicate it in the kitchen to no avail and I can't find it online. It's a coconut milk and red curry dish that's wonderful. Whenever I make it, it lacks the depth of what I've eaten in resturants or the stuff I got from the mix. Anyone got any ideas?

Try a brand of curry named Masaman. It is commonly used in restaurants. I live in LA and it was shown to me by a local Thai restaurant. It is cooked with chicken, coconut milk and lemon grass. The actual receipt came from the back of a bag of rice. It comes out a reddish brown , like chile con carne color. You can get masaman curry over the web.

i like using curry powder when cooking thai dishes.

here's a simple dish: ( u may use chicken, meat, fish for this recipe)

saute a garlic then add ginger & onion. add the chicken (or any desired meat that u like). let it simmer until the meat is slightly cook. add the coconut milk and curry powder together w/ the potato, eggplant and lastly the red bell pepper. add salt & pepper to taste. if u want it spicy, you may add chili flakes.

did u know that u may also use hard boiled egg for your curry dishes? try it using the above recipe.

Try altering your recipe to match this one:

* 2 teaspoons olive oil
* 1 pound skinless, boneless chicken breast halves - cut into thin strips
* 1 tablespoon Thai red curry paste
* 1 cup sliced halved zucchini
* 1 red bell pepper, seeded and sliced into strips
* 1/2 cup sliced carrots
* 1 onion, quartered then halved
* 1 tablespoon cornstarch
* 1 (14 ounce) can light coconut milk
* 2 tablespoons chopped fresh cilantro

1. Heat the oil in a large skillet over medium-high heat. Add the chicken pieces; cook and stir for about 3 minutes. Mix in the curry paste, zucchini, bell pepper, carrot and onion. Cook and stir for a few minutes.
2. Dissolve the cornstarch in the coconut milk, then pour into the skillet. Bring to a boil, then simmer over medium heat for 1 minutes. Right before serving, stir in the cilantro.
