Selma Hayek was on the Ellen show a few weeks ago and brought crickets for Ellen to try. She said they eat them all the time in Mexico. Take a look at the video.

Yes, in the region of Oaxaca. They are dried or fried and seasoned with sort of a chile and lime flavoring. If you go to Oaxaca they are sold all over! Women walk around with big baskets of them and sell you scoops full of crickets to take in bags and eat like chips as a snack! I was too afraid to try them when I went last summer, but my cousins did and said they were actually delish! You can also get them cooked into quesadillas and in and on other foods such as the tlayuda that another person mentioned which is a regional food from oaxaca.

Chapulines - The taste is unique, but not especially strange. They may be eaten individually as a botana (snack) or as a filling, eg: tlayuda filled with chapulines
