Bake a whole one for each person, keep the other 3 for later use.
Bake 2, split in half, scoop out, doctor filling up to make Twice-Baked, restuff, and save the rest of the potatoes for later.

Reading all these answers is so entertaining! Okay, mathematically it makes sense to cut each potato into 4 relatively equal-sized pieces, and then serve each person 7 of them. But, hey, that's a lot of potatoes! So, realistically, maybe mash 'em, or make them scalloped, or au gratin, or still cut them up into those 28 pieces to roast with olive oil and rosemary or whatever...then just serve normal looking portions, or even allow your guests to serve themselves...and then you get to enjoy those yummy leftovers! Or make potato doggy bags! Or both!

Cut them all in half and make twice baked potatoes out of them. If you are preplating give each person one and then perhaps put out a plate with the extras if any of your guests would like them. Or just make mashed potatoes~!
