A family of 7 just moved next door to me,
And I recently came to find out that the father that owns the house,
Has diabetes ( type 2 )

- I felt absolutely terrible for him...
So I have been trying to figure out what foods he should be eating on a daily basis, & what foods he should avoid because he suffers from diabetes?

I'd like to note, that they are a Mexican family,
His wife mostly cooks Mexican foods for him...
So if you have any ideas for what kind of Mexican
food you can find that would help his diabetes,
American food counts as well!!!!

Any advice or opinions would be so greatly appreciated!

Just stay away from sugars and treats as much as possible. High fiber and low calorie is best. There are MANY diet books on recipes and things diabetics can eat, and most meals can be made with lower risk to diabetics. Do a search for diabetic recipes and you will find a great deal of information.

High fiber, low fat, low sugar foods, almost exclusively.

I diet that is balanced, but would allow for weight loss to get to

Exercise a lot every day.

Do not drink fruit juice.

Complex carbs and no simple ones.

It is like being on any diet. Portions should not be too big. Pasta, potatoes, rice, bread should be very limited because they turn to sugar in the body. Cake, cookies, chocolate, candy of any sort should be very limited. Potato chips, pretzels, popcorn, same thing - very limited.

I would advise you to go to the library where you can get all sorts of books on the subject including cook books.
