I think it takes a variety of good foods for it. Swiss chard and kale are excellent sources of calcium and minerals. Quinoa is a complete protein. I love to juice a variety of fruits and veggies, and homegrown sprouts everday, and drink the live juice for the enzymes. I think raw fruits and veggies are optimal too.

No one food is optimal nutrition but if I had to choose one, I would say whole grain natural bread.

If it has to be just one 'food', the only single thing a human could eat for an extended period and maintain fairly good health would be dry dog-food...

I would say kefir, but if you're a vegan, dairy wouldn't be optimal, no matter what.
