This is excellent with a pork shoulder roast or a Boston butt roast.
Put roast in a large ziplock bag and pour in Wish Bone Italian dressing to marinade overnight. Next day preheat oven to 325 degrees. Take roast out of bag and put in foil pan. Make slits in the roast and insert cloves of garlic. Surround the roast with cut up carrots,onions and potatoes. Pour a can of Swanson's vegetable broth around veggies. Cover pan with foil and let cook in oven at least 5 hours at the low temp. The meat will be so tender. Makes excellent pork sandwiches as well. Yummy :)

If you have a smoker, then by all means use it for this meat - it's what they were made for!! If you don't have a smoker ( or the time to cook it - they take all day) use your crockpot. Place roast in crockpot w/1 pkg lipton onion soup mix, 1 can cream of mushroom soup, 1 soupcan of water & 1 stick of butter. Cook on low for 6 - 8 hours or til meat is done ( It will start to fall apart when ready) Don't forget the cornbread!!

score the skin with sharp knife then season with salt then roast in hot oven to start then turn down, when cooked take out and rest meat before cutting, if you like crackling remove the fat and put back in oven till crispy, mouth watering serve with roast potatoes and veg and enjoy!!!!!

I cut slits into it and add a piece of garlic, pieces of green or red bellpepper into as many slits as you would like to make. s
Season it with pepper, no salt as pork tends to be salty enough. Bake it uncovered, it will be tasty and beautiful!

in oven, 350 covered 2-2.5 hrs at most
add garlic, onion, celery and carrot, salt pepper
