I can't cook, it's a fact. I even burnt a clay model that was meant to be hardening in the oven!!!!!!!
But i desperately want to be able to cook one thing, i buy cook books but they are full of herbs and bits and bobs. Can anyone recommend a dish or even a book of simple but tasty recipes!!!!
Any recipes will be gratefully received as my family are hungry :-)

Baked Ziti

Ingredients:

1 pound of zitis
1 pound 10. oz. jar of prego sauce (meat flavored)
15 oz. ricotta cheese made by Polly-O (comes in a plastic-like cup)
1 - 8 oz. bag of whole milk mozarella (which ever brand you prefer)
1 tablespoon parsley flakes
1 egg
Spam spray
rectangle pyrex pan or alluminum pan
Preheat oven to 350
Boil zitis according to directions on box . While zitis are boiling, spray Spam on pan. Pour ricotta cheese into a bowl. Add the one egg and mix thoroughly. Then add the parsley and mix thoroughly. When pasta is done, drain and pour into pan. Add the ricotta mix and mix well into the zitis. Now add the prego sauce. Mix well. Lastly, add HALF on the mozarella cheese and mix well. (save the rest for later) Cover pan with aluminum foil. Place pan in oven for 30 minutes. After the 30 minutes, take pan out and take foil off. Sprinkle the rest of the mozarella on top of the zitis. DO NOT MIX!! Put pan back into oven UNCOVERED for 2-5 minutes so that the top layer of mozarella will melt. Now it's all done.
This is a simple and delicious dish. Hope you try this recipe. Enjoy.

Secret to making some happy is quantity along with quality.

Cube up ham in bite sized pieces"
equal amounts of ham, cubed potato which has been boiled about 3 minutes,
and cubed Velveeta cheese.

In a oven casserole put two-three cans of Campbell's Cream of Mushroom soup, and a can or two of milk. Stir.

Add the ham, potato and cheese to the soup mixture.

Bake about an hour at 375.

PS you may also add some chopped onion, green onion, chopped olives if you want to make it a bit different.

Serve with a salad or any green vegetable.

Don't skimp on the ham, ham is cheap and you don't need to buy the best quality.

Honey Chicken Stir Fry

To serve 4:

1 tbsp olive oil
2 lemons (unwaxed good!), one sliced into thick slices
700 g sweet potatoes, peeled and diced
2 cloves garlic, crushed
4 chicken breast fillets, skinned, boned and diced
1 tsp dried rosemary
1 tbsp honey

Heat the oil in a large frying pan, add the sweet potatoes and sliced lemon. Cook over a gentle heat for 15 mins or so, turning occasionally, until the potatoes are browned and tender.

Add the garlic, chicken and rosemary and increase the heat; season. Cook for ten minutes or so until the chicken is browned and cooked with no trace of pinkness.

Squeeze the remaining lemon over the potatoes and chicken, and stir in the honey. Simmer for 1-2 minutes, then serve with steamed broccoli.

Recipe: Spanish sweet potato with chorizo, peppers and fried egg.

Serves 2.

Cut two sweet potatoes into chunks (no need to peel) and put in a small roasting pan. Peel a red onion, cut it in half, and then cut the halves into half-moon-shaped slices. Deseed one each of red and green peppers, then cut the flesh into broad strips. Add the peppers and onion to the pan with the sweet potato.

Mix together 2 tblspoons olive oil, 1.5 tspoons smoked Spanish paprika, and 0.25 tsp ground cumin; add some salt and freshly ground pepper to taste. Pour this mixture over the vegetables and stir to coat.

Roast for about 30 mins at 200 deg C/400 deg F/gas mark 6; the vegetables should be tender and have a slightly charred appearance.

Take about 200 g chorizo sausage, cut into thick rounds, and 100 g bacon or pancetta, cut into chunks. Put about 1 tblspoon olive oil into a frying pan, heat, and use to cook the bacon and chorizo. When cooked, add a couple of cloves of garlic, finely chopped. Turn the heat down (don't want the garlic to burn) and cook for another minute, and then add to the vegetables, retaining the oil in the frying pan. Give the vegetable and meat combo a good stir, so the ingredients are combined. Add a little more oil to the frying pan if you need to, and fry a couple of large eggs to your preference.

To serve, tip vegetable and meat mixture onto plates, topping each with a fried egg. Comfort food supreme.

Cooking is not something you can learn in a few minutes or by reading a recipe. Most southern girls start learning very young & pick up all the family secrets over the years. Go to food nework's website & browse the recipes they have - they code them as easy, medium, difficult, etc....Pick out one marked as "easy" to start out with & practice first before serving to anyone.....Try out a new dish every few days & before long, you'll be cooking like a pro! Good luck!!

Simple as anything - Pasta Bolognese.... On a LOW heat in a large frying pan with hot cooking/olive oil toss in a load of chopped onions and peppers and three or so cloves of crushed garlic. Cook slowly until for five mins or so - then toss in minced beef and cook until the beef is no longer red. Then toss in chopped mushrooms and season with salt and pepper (too much salt will spoil dish and too little will leave it bland so taste as you do this). Pour in couple of tins of chopped tomatoes and then add sprinklings of mixed herbs (to taste). Leave to simmer for twenty mins or so whilst you cook pasta. Hey presto, simple as anything and a darn site more impressive than beans on toast (little things like a sprig of basil on top of each meal looks nice too).

What you need to do is boil spaghetti noodles. Then take a bit of butter, parmesan cheese and Colby Jack cheese and mix it in. If you can't use the oven then put it in the microwave for a while. Then make corn to go with it. To make corn open the can, then dump it in a bowl and put it in the microwave for a minute. Then add salt and butter to taste. When you are done, you have cheesy noodles and corn.

Here is a neat trick. Dice some of your faviorte meats and fish and dice some veg like mushrooms, carrots, broclie, pineapple, peppers and keep them in all seperate bowls. Then get a wok and fry off ONE sort of meat or fish with the differnt veg with a little oil and your favirote herbs and spices.

If you serve it with some noddles or rice it can be very filling and its so simple as you have to do is fry it. Also it keeps everyone happy cos people can tell you what they would like to have.
