Bungee Jumping in Queenstown, Jet boating on Shotover River (also at Queenstown) - Queenstown is a major tourism area.

Skiing in the Southern Alps and Mt Ruapehu - winter is during June, July, August.

IF you like hiking, you can walk the Milford track - 4 days of tough walking & climbing - either freedom walking (do it yourself - much cheaper) or pay heaps and get the tour companies to carry your luggage while you do the afternoon stroll.
There are a number of excellent hiking tracks in the South Island as well.

Visit Bay of ISlands up north - fishing, snorkelling, & diving off 3 Kings and Poor knights islands.

Visit Rotorua - lots of history, hot mud pools and always the smell of sulphur.

Lots of things to do in Auckland, Wellington, Christchurch and Dunedin as well
