I had a chicken and bacon crumble in a restaurant once and I want to cook it for dinner. I've Googled it but found no recipes - can anyone give me any ideas on how to do it? It was like a crumble mix (but savoury) on top of creamy chicken and bacon, just don't know how to make the crumble.

If you have a food processor whiz up some bread, a couple of slices, to make breadcrumbs. You don't want dust so leave a few lumps no bigger than a frozen pea though. If you don't have a food processor then freeze the bread and grate it roughly and break it all up with your fingers. Then finely grate some parmesan cheese, about half as much as the amount of breadcrumbs you have. If you don't have parmesan you could use another hard cheese like peccorino, grana padano, or maybe gruyere. Grate or crush a clove of garlic, or however much you want depending on if you like garlic a lot! Or leave the garlic out as I often do. Then add in some chopped chives (either fresh or dried), about half as much as the amount of parmesan you used. Add a dash of salt and pepper and a splash of olive oil (or vegetable oil but olive is nicer) and mix it all up with your fingers until it's all coated. Pop it on top of your chicken and bacon mixture and bake it. Should come out lovely and crispy. yum :)

This easy and delicious recipe takes just minutes to make.
INGREDIENTS:
6 slices bacon
1 Tbsp. butter
1 Tbsp. olive oil
6 boneless, skinless chicken breasts
1 onion, chopped
3 cloves garlic, minced
1/2 tsp. salt
1/8 tsp. pepper
1-1/2 cups shredded cheddar cheese
PREPARATION:
Cook bacon in 12" skillet until crisp, about 4-6 minutes. Crumble bacon and set aside. Pour bacon grease out of skillet, but don't wash or wipe it. Add butter and olive oil to skillet. Saute chicken breasts in this mixture over medium heat, turning once, until chicken is cooked and no longer pink in center. Place chicken in ungreased 12x8" baking dish.
Cook onion and garlic in drippings remaining in skillet. Cook until onion is softened, then stir in salt, pepper, and cooked bacon. Spoon over chicken breasts and sprinkle with cheese. Bake at 350 degrees for 10-15 minutes until cheese is melted.
