Tried two seperate batches of semi-skimmed. The coffee is hot. What's going today??!

There are several possible reasons why your milk separated and clotted in hot coffee...

1. It HAS turned, possibly due to not being kept cold enough.

2. It was frozen or close to frozen at some point, glopping up the homogenization.

3. There is contamination from bacteria or other food...Milk will absorb and react with just the smells of some types of food, especially acidic ones.

4. And not to be gross, but... backwash? Ever drink from the carton? That will do it too.

Add the milk (and sugar) to the cup before the hot coffee. That way the cold milk has time to come up to temperature as the coffee is added. If the hot coffee is already in the cup when you add the milk, it will often separate into those gross little curdles.

Skimmed milk will always separate in hot liquids, but I can not tell you why as I don't know why; sorry!
