Start with beef stock, then add a pasty, lump-free mixture of cold water and flour, slowly stirring while you mix.

Throw a little red wine in for flavor, and add salt and pepper to taste.

K here's a great family recipe. It's easy-just take it slow. Drippings means bacon grease, sausage grease etc. depending on what flavor you want. I use straight bacon grease-I think it tastes the best.

Making gravy is easy but most of it is eye measurement. The way to make gravy is to start with the drippings of whatever it was you made. It could be chicken, turkey, pork, beef, etc.
To make the gravy you need a thickening agent such as corn starch or flour. I prefer flour. You want to get the white all purpose flour.
Put your drippings into a frying pan. Don't add you flour directly into the hot drippings. You want to add cold water to your drippings to cool it down. Flour dissolves best in cold liquid. I usually get a large glass, fill it with cold water and then dissolve 3 tablespoons of flour into the water. Then I pour the water with the dissolved flour into the drippings. That way you have no lumps.
After adding the water and dissolved flour you then turn on the heat to medium and continue to stir the gravy. As the drippings reheat it will begin to thicken. Continue until the gravy reaches the desired thickness. If it gets too thick just add more water. If too thin add more flour.
