Pl.suggest easy indian or south indian vegeterian recipies for break fast & dinner for my kids

Vangi Bhaat:

Ingredients: 1 1/2 cups tendli or brinjals -sliced horizontally
1 cup long grained rice
1 tsp mustard seeds
1 tsp cumin seeds
3 cardamoms
1" cinnamon
5 cloves
1 tsp fenugreek seeds
2 slit green chilli
5 curry leaves
1 tsp asafoetida
1 tsp turmeric powder
1 cup grated coconut
1 tsp chilli powder
1 tbsp ghee
salt to taste


Garnish
1 cup grated coconut
2 tbsp chopped coriander
2 tbsp fried cashewnuts


Spice Powder
grind all the ingredients together:
2 roasted cloves
1" cinnamon
1 tsp roasted coriander seeds
1 tsp roasted cumin seeds
1 tsp caraway seeds
1 cup grated dry coconut
2 tbsp seasame seeds

Method: Soak rice for 10 minutes. Drain and keep aside. Heat ghee, add mustard seeds and wait until crackled. Add cumin seeds, cardamom, cinnamon, cloves, fenugreek seeds, green chillies, curry leaves, asafoetida.

Add tendli or brinjals, rice and saut?or a few minutes. Add turmeric powder, chilli powder, half the spice powder, salt and mix well.

Saut?or a further 2 minutes. Add 2 cups of hot water and cook on slow flame till the rice is tender. Add 1 cup grated coconut and remaining half of spice powder.

Cover and cook for about 2 minutes on a very slow flame. Serve hot, garnished with the grated coconut, coriander and the fried cashewnuts.

Uttapam:

Ingredients: 2 cups (360 g) parboiled rice
1/2 cup (90 g) split and husked Bengal Gram (dhuli urad)
1/2 tsp fenugreek seeds
2 tsp salt
an iron griddle or tawa
Oil to smear the pan for cooking the uttapam

Method: Soak rice, daal and methi in water for 5-6 hours.

Grind fine, add salt and enough water to make a dropping consistency and leave to ferment 5-6 hours.

Heat tawa, and brush oil over it. When really hot, splash a little water over it, and pour about 1 cup of batter on to it. It will spread a little.

When the edges start browning a bit, pour a trail of oil around it. Turn it over and let it brown on the other side too.

For an onion uttapam: Before you turn the uttapam over, sprinkle a mixture of finely chopped onions, tomatoes, coriander leaves and green chillies.

Upma:

Ingredients: 4-6 tbsp oil
1/2 tsp skinned urad dal
1/4 tsp mustard seeds
1/4 tsp cumin seeds
2 sliced onions
1 curry leaves
3-4 chopped green chillies
2 tsp garlic paste
1 tsp ginger paste
2 tsp ground coconut
pinch ground cloves
pinch turmeric powder
salt
250 gm of diced vegetables
1 chopped tomato
150 gm semolina
250 ml hot water
100 ml curd
2 tbsp chopped coriander
juice 1 lime


Method: Heat oil, fry dal, mustard and cumin seeds for 15 seconds. Add onions, curry leaves, chopped chillies, ginger, garlic, turmeric, and salt and coconut paste. Stir and fry for 5 minutes.

Add vegetables and tomato. Fry for 3-4 minutes. Add semolina.

After 2-3 minute, pour in water and curd. Cook for 5 minutes until dry.

Garnish with coriander and sharpen with lemon juice.

Serve hot with rasam.

Spicy Chatpati Fried Idli:

6 pcs of ready (left over) Idli each cut in 4-6 pcs.
1 tsp mustard seeds
1 tsp cumin seed
5 curry leaves
1 tsp asafoetida
1 tsp turmeric powder
1 cup grated coconut
1 tsp chat masala
1 tsp red chiily powder
1 tsp Tomato sauce
1/2 tsp Sugar.
1 tbsp cooking oil.
salt to taste

Heat oil in pan .Add all the spices one by one .Add pieces of Idli finally .Stir for sometime .Let all the spices mix properly.Garnish with coriandar and grated coconut .Serve Hot.

Kids will love it..Hhhmmmmmmmm.

mush a bouiled egg with mayonnaise slt, pepper, spring onions, and any spices you like. This will make a paste that you can spread on bread. Make a sandwich and enjoy!
