Here's a great recipe that is just delicious and they are really soft

Chocolate Chip Cookies

In a Large bowl mix together:

3/4 cup Sugar
3/4 cup Brown Sugar
1 Cup Soft Butter (Crisco Sticks works the best)
1 teaspoon Vanilla
2 TableSpoons Milk

Mix together until creamy then add 1 egg mix again then add 1 more egg.

Mix the following in separate bowl

2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt

Slowly mix dry ingredients into the wet ingredients.
Add 2 Cups Chocolate Chips

Roll into balls and bake 7-9 minutes at 350 degrees.

**** They are done when the edges start to turn brown. They will still cook a few minutes after you take them out**** It took me forever to figure out what a big difference that makes!

Another tip: Just put a piece of bread in the cookie container and they will stay soft for a long time.

Here is how to make crunchy cookies:

Ingredients: 1.5 cups (180 gm) flour
1 egg
225 gm (1 cup) butter
1/2 cup powdered sugar
1 tsp vanilla essence

1200 W Microwave

Method: Cream flour, egg, butter, sugar and vanilla together.

Mix in the flour to make a smooth dough.

Form into 24 small balls and flatten with a fork.

Place 6 at a time on a microwave baking tray or lightly greased greaseproof paper and cook at 100% for 1 1/2 -2 1/4 minutes, depending on the size of the cookies. Give the tray a half turn halfway through the cooking time.

Allow to cool on a wire rack. Repeat with the remaining mixture. Switch on the grill also according to your oven's manual.

None that I know of -- they tend to dry out quickly. And homemade cookies really shouldn't last longer than a week -- no preservatives.

Best thing to do would be to make up a batch of cookie dough and bake some of it to the right texture for you and then refrigerate (if going to be using within the next 3-5) or freeze (wrap in plastic wrap 2 times and then place in a freezer bag). Then just bake some every couple of days.

Heres my favourite one, it stays soft for 2 days but i've neverleft them for a week.
½ lb butter, softened to room temperature
¾ cup sugar
¾ cup light brown sugar
2 jumbo eggs
1½ teasp vanilla extract
2¼ cups flour
1 teasp baking SODA
½ teaspoon salt
2 cups semisweet chocolate chips

Preheat oven to 375 degreesF
Creanm together butter and both sugars until light & fluffy. Beat in eggs, one at a time, then add vanilla extract. Sift together flour, baking soda and salt....stir into creamed mixture. Fold in chocolate chips. Drop by teaspoonfulls onto greased cookie sheet (I use my pizza stone, the bottoms dont get hard that way).
Bake for about 8 minutes, or until LIGHTLY browned around the edges, and the centers look firm but are still soft. Remove from sheet (stone) carefully because they will seem too soft until cooled (about 10 minutes).
